Steak, Scallops, and Asparagus with Mashed Potatoes 🥩🌿✨
Ingredients:
For the Steak:
- 1 pound filet mignon or sirloin steak, cut into medallions
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
For the Scallops:
- 1/2 pound large scallops, cleaned and patted dry
- 2 tablespoons unsalted butter
- 1/2 teaspoon paprika
- Salt and pepper to taste
For the Asparagus:
- 1 bunch fresh asparagus, trimmed
- 1 tablespoon olive oil
- Salt and black pepper to taste
For the Mashed Potatoes:
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 1/2 cup milk
- 3 tablespoons unsalted butter
- Salt and black pepper to taste
Directions:
1. **Cook the Mashed Potatoes:**
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash until smooth.
- Stir in milk, butter, salt, and pepper. Cover and keep warm.
2. **Cook the Steak:**
- Season steak medallions with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium-high heat. Sear steak for 3-4 minutes per side for medium-rare (adjust for desired doneness). Remove from the skillet and let rest.
3. **Sear the Scallops:**
- Season scallops with paprika, salt, and pepper.
- In the same skillet, melt butter over medium heat. Sear scallops for 1-2 minutes per side until golden brown and opaque. Remove and set aside.
4. **Cook the Asparagus:**
- Toss asparagus with olive oil, salt, and pepper.
- Grill or sauté for 4-5 minutes until tender-crisp.
5. **Assemble and Serve:**
- Plate mashed potatoes, steak, scallops, and asparagus. Drizzle any remaining pan juices over the dish and garnish with fresh parsley if desired.
