I visited Union Market day as part of foraging & gathering. Good to be back, & find Maryland crab meat for a birthday tomorrow at the The District Fishwife & a picanha at Harvey's Market. I may also have played a mean game of pinball. (It was The Way.)
Matthew wanted for this dinner! Big shout out to Harvey's Market and Roseda Farm for this cryo-packed brisket!
Harvey's Market is a go-to for quality meat for many DC residents. The local market prides itself on being a healthy butcher shop sourcing from environmentally friendly farms. Do you have a favorite small business? Shout them out here:

One of the best things to happen in cities around the US over the last several years is the creation of communal markets. One of my favorites here in DC (we have a few which is ) is Union Market District in what used to be DC's old warehouse district which has found new life in the last few years... new restaurants, shops, and the centerpiece is a huge market featuring the best of the region, vendor stalls with everything from plants, coffee, and cheese to sundries, meat, and fish!
I have found vendors at Union Market that have always delivered only the best possible ingredients and supplies. If you are ever in DC for a visit, take an afternoon and check out Union Market; grab a bit from one of the food stalls. tacos at , or one of the best cups of coffee you'll have in DC at Peregrine Espresso. Pick up a steak at Harvey's Market or some incredible fish at District Fishwife
These types of markets bring local food and vendors to the people in readily accessible ways. They help all of us shop local and support our communities!

I always recommend working with a local butcher (Harvey's Market is the best!). Not only are you supporting local business, but a butcher can help get you the cuts you need, so you have more options than just what's available at the grocery.
The farm is a little more fun to get to this time of the year. With more snow coming in I wanted to give a mention to a few partners that currently have our products for purchase! More partners to highlight during the summer!

George...the lamb shoulder was delicious! I rubbed it with a mix of olive oil, salt, pepper, garlic powder, onion powder, oregano, rosemary, and thyme then smoked it for seven hours at 250 degrees. Fantastic. Thank you!
Today’s kitchen experiment was making a stir fry sauce for that didn’t sacrifice flavor. Key ingredient was black garlic which added depth of flavor, color and a touch of sweetness, similar to what oyster sauce would do. It turned out really well! Gonna make another batch to iron out the exact measurements before blogging this one. Also got to play around with using thinly sliced hanger steak that had been cooked sous vide and chilled, instead of starting with raw beef (results = much more tender.)

Our delicious wagyu. One pound, served three ways: sliced and seared, shabu-shabu, and cubed and seared. Fantastic and worth every penny. Thank you George and Marty!
Harvey's Market is one of my weekly go-to places. The meat on offer is wonderful, and it's the staff who make the trip worthwhile. HARVEY'S!! Yes.
