🍎 Glazed Apple Fritters

Soft and fluffy on the inside, beautifully golden and crisp around the edges, and packed with tender cinnamon-spiced apples. A generous vanilla glaze gives these homemade fritters their irresistible bakery-style finish.

Ingredients
For the Apple Fritters
* 2 cups all-purpose flour
* 1½ cups peeled and finely diced apples
* ⅓ cup granulated sugar
* 2 large eggs
* ½ cup whole milk
* 3 tbsp unsalted butter, melted
* 2 tsp baking powder
* 1½ tsp ground cinnamon
* 1 tsp vanilla extract
* ¼ tsp ground nutmeg
* ½ tsp fine salt
* Neutral oil, for frying
For the Vanilla Glaze
* 1½ cups powdered sugar
* 3 tbsp whole milk
* 1 tsp vanilla extract
* Pinch of salt

Instructions
1. Prepare the apples: Peel, core, and dice the apples into small pieces so they cook quickly and distribute evenly throughout the fritters.
2. Mix the dry ingredients: Whisk together the flour, baking powder, cinnamon, nutmeg, sugar, and salt.
3. Combine the wet ingredients: In a separate bowl, whisk the eggs, milk, melted butter, and vanilla until smooth.
4. Make the batter: Pour the wet mixture into the dry ingredients and gently stir just until combined. Fold in the diced apples. The batter should be thick and scoopable.
5. Heat the oil: Add about 2 inches of neutral oil to a heavy saucepan or deep skillet and heat to 350°F (175°C).
6. Fry the fritters: Carefully drop generous spoonfuls of batter into the hot oil. Gently flatten each mound slightly. Fry for approximately 2–3 minutes per side, until deep golden brown and cooked through.
7. Drain: Transfer the fritters to a wire rack set over a baking sheet and let them cool for several minutes.
8. Prepare the glaze: Whisk together the powdered sugar, milk, vanilla, and salt until smooth and pourable. Add a tiny splash of milk if you prefer a thinner glaze.
9. Glaze generously: Dip each warm fritter into the vanilla glaze or spoon it over the top. Return to the rack and allow the glaze to drip down the sides and set.

🍏 Tip: Granny Smith gives the fritters a tart contrast, while Honeycrisp or Pink Lady creates a naturally sweeter apple filling. Keep the apple pieces small so every fritter gets plenty of fruit.

🍩 Homemade Glazed Doughnuts

Soft, pillowy homemade doughnuts fried until beautifully golden and dipped in a smooth vanilla glaze. They’re light, fluffy, and especially irresistible while still slightly warm.

Ingredients
For the Dough
* 3½ cups all-purpose flour, plus more as needed
* ¾ cup warm whole milk
* ⅓ cup granulated sugar
* 2½ tsp active dry yeast
* 2 large eggs, room temperature
* 5 tbsp unsalted butter, softened
* ½ tsp fine salt
* 1 tsp vanilla extract
* Neutral oil, for frying
For the Vanilla Glaze
* 1½ cups powdered sugar
* 3 tbsp whole milk, plus more if needed
* 1 tsp vanilla extract
* Pinch of salt

Instructions
1. Activate the yeast: Combine the warm milk, yeast, and a spoonful of the sugar. Let stand for 5–10 minutes, until foamy.
2. Prepare the dough: Add the remaining sugar, eggs, vanilla, softened butter, and salt. Gradually mix in the flour until a soft, slightly tacky dough forms.
3. Knead: Knead for approximately 6–8 minutes, until the dough becomes smooth and elastic.
4. First rise: Place in a lightly greased bowl, cover, and let rise in a warm spot for 1–1½ hours, or until doubled.
5. Shape: Roll the dough to roughly ½-inch thickness. Cut into rounds for filled-style doughnuts, or cut out the centers for classic rings.
6. Proof again: Arrange on parchment, loosely cover, and allow the doughnuts to rise for another 30–40 minutes, until light and puffy.
7. Fry: Heat neutral oil to 350°F (175°C). Fry a few doughnuts at a time for about 1–2 minutes per side, until evenly golden. Transfer to a wire rack.
8. Make the glaze: Whisk powdered sugar, milk, vanilla, and a pinch of salt until glossy and smooth.
9. Glaze: While the doughnuts are still slightly warm, dip them into the vanilla glaze. Return to the rack and allow the excess glaze to drip away and set.

🍩 Tip: Keep the frying oil close to 350°F—oil that’s too cool can make the doughnuts greasy, while excessively hot oil can brown the outside before the centers finish cooking.

🥣 Basic Skillet Instructions
1. Make the dough: Combine the dry ingredients for your chosen flatbread. Add the oil, butter, yogurt, and/or warm water listed in the recipe. Mix until a soft dough forms.
2. Knead: Turn onto a lightly floured surface and knead for about 5–7 minutes, until smooth and elastic.
3. Let it rest: Cover the dough and rest for 20–30 minutes. For recipes containing yeast, allow 45–60 minutes, or until noticeably puffy.
4. Shape: Divide into equal portions, roll into balls, then flatten or roll each piece to the desired thickness.
