Mango Lassi (Indian Mango Drink)

Ingredients:
1½ cups chopped fresh mango (or 1 cup canned mango pulp)
Âľ cup plain or Greek yogurt
Âľ cup whole milk (or milk of choice)

1 cup ice cubes

Instructions:

Ingredients:
1 can (28 oz) whole tomatoes
2 tbsp olive oil
ÂĽ cup grated or finely minced onion
½ to ¾ tsp dried oregano (to taste)
1 tsp dried basil
¼ to ½ tsp red pepper flakes (adjust to preference)
3 garlic cloves, minced
2 tsp sugar
1 tsp salt

Instructions:

In a bowl, crush the tomatoes with your hands or a fork into small chunks. Set aside.

In a saucepan, heat olive oil over medium heat. Add onions, oregano, basil, and red pepper flakes. Cook for 3–4 minutes until fragrant and softened.

Stir in minced garlic and cook for about 30 seconds.

Add the crushed tomatoes, sugar, and salt. Stir well and bring to a gentle simmer.

Simmer uncovered for about 30 minutes, stirring occasionally, until slightly thickened and flavorful.

Taste and adjust seasonings if needed.

1 cup unsalted butter, softened

1½ cups butterscotch chips

Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, then add vanilla extract.

1 can warm water
2 tbsp butter
4 eggs

6 tbsp corn flour

For the Crust:
200g Tennis or Nice biscuits, crushed
75g unsalted butter, melted

Instructions:

Line a muffin tin with brown paper muffin liners.

In a bowl, mix crushed biscuits with melted butter. Spoon into the bottom of each liner and press down firmly with the back of a spoon to form the base.

In a large microwave-safe bowl, whisk together condensed milk, milk, warm water, butter, eggs, salt, and corn flour until smooth.

Microwave on high for 7 minutes. Stir well. Microwave again for 5 minutes. Stir again, then microwave for another 3 minutes. The mixture should be thick and smooth.
