A Guide To Jamón Ibérico And How To Find The Best

"Jamón Ibérico is made from pure or crossbred Iberian pigs that are at minimum 50% Iberian. There are four types of jamón ibérico—determined by diet, breed, and how they’re raised—and can be identified by colored tags.
A white tag indicates jamón Ibérico de cebo, which are commercially raised on an open farm and fed a diet of cereals.

Green specifies jamón Ibérico cebo de campo, in which the swine are also fed a diet of cereals, but are free range.

If you spot a red tag then that means you’re purchasing jamón Ibérico de bellota from free-range, non-purebred pigs that have been fed with only acorns during their final months.

The highest grade, though, possesses a black label, which marks a 100% purebred Iberian pig that has solely feasted on acorns in its last three to four months and are given DO (denominations of origin) status, proving that the farm has followed the proper guidelines to produce the best of the best."

For cured ham lovers, many would argue that jamón ibérico de bellota is the best thing you can get your hands on. But to make sure you’re getting the finest slices you have to keep your eyes open for a few things. Here’s what to look out for next time you’re in Spain.
