Carrot Banana Muffins 🥕🍌✨
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 large ripe bananas, mashed
1/3 cup brown sugar
1/4 cup vegetable oil (or melted coconut oil)
1 large egg
1 teaspoon vanilla extract
1 cup grated carrots
1/4 cup chopped walnuts (optional)
Instructions:
❶ Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups lightly.
❷ Mix the Dry Ingredients:
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
❸ Prepare the Wet Ingredients:
In another bowl, mash the bananas. Add the brown sugar, oil, egg, and vanilla extract, mixing until smooth and combined.
❹ Combine the Mixtures:
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
❺ Fold in the Add-Ins:
Gently fold in the grated carrots and walnuts (if using).
❻ Fill the Muffin Cups:
Scoop the batter into the prepared muffin cups, filling each about 3/4 full.
❼ Bake the Muffins:
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
❽ Cool and Serve:
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy these moist and flavorful muffins!
