Made some Dandelion Honey 🍯 for the first time. Our yard is full of them. I didn't want to take too many, as the 🐝s have been using them like crazy. However, this recipe turned out fantastic!!
Fun fact, the whole plant is edible! The greens can be used in salads or sautéed.
Caution: do not use dandelions from your yard if you treat your lawn with any chemicals! Use untreated plants only.
Ingredients:
4 cups dandelion petals
4 cups water
3 lemon slices (1/4-inch)
1/2 vanilla bean, split in half
2 1/2 cups granulated sugar
Recipe:
Soak petals in ice water for 5 minutes. This will help remove any potential insects.
Drain petals and place them in a pot with 4 cups of water, 3-4 lemon slices, and 1 vanilla bean split sliced in half.
Bring to a boil, then reduce the heat to a medium-low. Continue to simmer for 30 minutes.
Remove the pot from the heat and let the mixture steep for 6 hours.
Pour the mixture through a mesh strainer or cheesecloth. This will ensure the petals, lemons, and vanilla bean have been removed. Return dandelion tea into the pot. (Give this liquid a try at this stage... such a great tea flavor!)
Bring the tea to a low boil and gradually add 2.5 cups of sugar. Stir until the sugar if dissolved.
Lower heat, and simmer until the honey reaches the desired thickness and color. This can take roughly an hour.
Note: the honey will thicken upon cooling as well!
Allow the honey to cool and place in a jar for storage. This can be kept in the fridge for 6 months, placed in the freezer, or canned to make it shelf stable.
