Creamy Mash & Color Burst Chicken Plate
A cozy-meets-fresh combo: juicy pan-seared chicken breast, velvety mashed potatoes, and a vibrant salad packed with crunch, color, and flavor. This plate hits all the comfort notes while keeping things light and wholesome.

For the Chicken
1 chicken breast
1 tsp olive oil
Salt & pepper to taste
¼ tsp paprika (optional)
¼ tsp garlic powder (optional)
For the Mashed Potatoes
2 medium potatoes, peeled and chopped
1 tbsp butter
2–3 tbsp warm milk
Salt to taste
For the Fresh Salad
1 cup arugula
1 small cucumber, sliced
1 tomato, chopped
½ red bell pepper, chopped
½ yellow bell pepper, chopped
1 tbsp olive oil
1 tsp lemon juice
Salt & pepper to taste

Cook the Chicken
Season chicken with salt, pepper, paprika, and garlic powder.
Heat oil in a skillet over medium heat.
Cook chicken for 5–6 minutes per side, until golden and cooked through.
Make the Mashed Potatoes
Boil potatoes until soft (12–15 minutes).
Drain, then mash with butter, warm milk, and salt until creamy.
Prepare the Salad
Combine arugula, cucumber, tomato, and bell peppers in a bowl.
Toss with olive oil, lemon juice, salt, and pepper.
Assemble the Plate
Add the seared chicken, a scoop of creamy mash, and the bright salad to the plate.
Serve warm and enjoy the perfect balance of comfort and freshness.
