½ tsp garlic powder
½ tsp onion powder
¼ tsp rubbed sage
Pinch of cayenne, optional
1 tbsp unsalted butter, for finishing
👨🍳 Instructions
🥐 Make the Biscuit Dough
Preheat the oven to 450°F / 230°C.
Whisk flour, baking powder, baking soda, salt, and sugar together.
Cut the very cold butter into the flour until you have irregular pea-sized pieces.
Pour in cold buttermilk.
Stir gently just until a shaggy dough forms.
Turn the dough onto a lightly floured surface.
Don't overmix—the little cold butter pockets are what help create those beautiful flaky layers. 🔥
🧈 Fold & Cut
Gently pat the dough into a thick rectangle.
Fold it into thirds.
Rotate and repeat the fold 2 more times.
Pat the dough approximately ¾–1 inch thick.
Cut straight down with a biscuit cutter without twisting.
Arrange biscuits close together on a lined baking sheet.
Bake for 12–15 minutes, until tall and deeply golden.
Brush immediately with melted butter. 🤤
🍗 Brown the Sausage
Place chicken or turkey breakfast sausage in a large skillet over medium-high heat.
Break it into rustic bite-sized crumbles, not tiny dry crumbs.
Cook for 6–8 minutes until deeply browned and fully cooked.
If the sausage is very lean, add 1 tablespoon butter.
Add black pepper, sage, garlic powder, and onion powder.
🔥 Let some sausage pieces develop dark caramelized edges—that's where the country-gravy flavor starts.
🤍 Make the Southern Gravy
Reduce heat to medium.
Sprinkle flour directly over the browned sausage.
Stir continuously for about 2 minutes.
Slowly pour in the milk while stirring.
Add heavy cream.
Season with salt, cracked black pepper, garlic powder, onion powder, sage, and optional cayenne.
Bring to a gentle simmer.
Cook for 5–7 minutes, stirring frequently.
The gravy will gradually transform into a thick, creamy, pepper-speckled country gravy.
🤎 Finish Until Thick & Glossy
Reduce heat to low.
Stir in 1 tablespoon butter.
Simmer another minute if needed.
Taste and adjust the black pepper.
The gravy should fall from the spoon in a slow, heavy ribbon with plenty of sausage in every scoop—not run across the plate like milk.
🥐 Smother Those Biscuits
Split hot biscuits in half.
Arrange the fluffy interiors facing upward.
Spoon enormous amounts of hot sausage gravy over the center.
Let the gravy naturally settle between the flaky biscuit layers.
Keep some deeply golden biscuit edges exposed for contrast.
Finish with another crack of black pepper and serve immediately. 🤤🔥
💡 Tips & Substitutions
Chicken or turkey breakfast sausage gives you classic savory breakfast flavor without pork.
Keep the biscuit butter and buttermilk very cold for taller, flakier layers.
Freshly cracked black pepper is essential for that old-fashioned Southern country-gravy flavor.
If the gravy becomes too thick, stir in warm milk a few tablespoons at a time.
Make the gravy slightly looser than your final preference—it continues thickening as it sits.
