Homemade Beef Stew šŸ„• šŸ„” šŸ²

Start with 2 pounds of cubed up stew meat, roast, steak (any cut of beef you want), 1 package of Lipton beefy onion dry soup mix, 1 package of beef stew seasoning, 2 cans of DICED potatoes, 1-1/2 cups of cut up pieces of carrots (I cut them to the same size as the potato cubes), about 2.5 cups of bone broth, 1/4 cup of all purpose flour to dust the stew meat in.

Dump your stew meat into a gallon ziplock baggie with 1/4 cup of flour. Seal and shake. This will lightly coat the stew meat. Then pan fry your floured meat in anout 3 tbs of oil (brown outside - inside doesn’t need to be cooked through).

Once your meat has some browning to the outside, dump it into your instant pot. Add 1 packet of beefy onion soup mix, 1 packet of beef stew seasoning, your carrots and your bone broth. Stir well! Then close your insta pot and cook for 30 minutes. Once that’s done, open it up, stir it well and add your potatoes (drained). Close the pot again and cook another 5 minutes.

Comes out absolutely perfect and the beef is so tender!

Low Carb Beef Enchiladas:

I use two pounds 93/7 ground beef seasoned with 2 packages of taco seasoning (just like taco meat).

Blend up a can of rotel & a can of green chilis (if you don’t want it chunky) and add the blended rotel and green chilis to about 1/2 block of cubed up Velveeta. (I used the 16 oz Velveeta block) Use bone broth, milk or water to thin down the cheese sauce. Once thoroughly melted, remove from heat. Add a little of the velveeta cheese sauce in the bottom of your baking dish. Enough to thinly cover the bottom.

Grate an 8oz block of Colby jack cheese and set aside.

Place about about 4 oz meat per zero carb tortilla. (I used the Mission Zero Carb Burrito size tortillas) and top the meat with a little bit of grated Colby jack cheese and a little bit of your cheese sauce. Roll the tortillas into enchiladas and place in the baking dish that has the Velveeta sauce in the bottom. Keep rolling your enchiladas out until you’ve used all your meat mixture. Makes about 12-15 enchiladas.

Use the remainder of your velveeta sauce and pour over the top of your enchiladas and sprinkle the rest of your graded cheese on top.

Bake the enchiladas at 350° for about 30 minutes until heated through well and the cheese is bubbling…
