🌳From Tree to Bottle I Part 1: Tapping the Trees

Ever wonder where a bottle of black walnut syrup actually begins? Right here - with a black walnut tree and a single drop of sap.

When the conditions are right in late winter, with temperatures moving above freeing during the day and back to below freezing at night, the sap begins to flow. That's when syrup season beings for us.

We drill a small tap hole into selected mature black walnut trees, insert a spike and hang a covered collection bucket. Then we let the trees do the work.

And yes - black walnut sap really is this clear!

It's hard to imagine that something that looks almost like water will eventually become the rich, dark black walnut syrup you see in the bottle. But there's a whole lot that has to happen between this first drop and the finished product.

Over the next several posts, we're going to take you along for the entire process - from our trees to the bottle.

🍁BEHIND THE SYRUP - Equipment Spotlight

Ever wonder what it takes to turn black walnut sap into syrup?

First up is one of the workhorses of our operation - our Bassett 2' x 3' Maple Syrup Evaporator from Bassett Maple Co.

Yes, it says maple - but ours gets put to work on black walnut sap!

We purchased this evaporator before the 2026 syrup season and put plenty of sap through it this spring. From firing it up on cold February days to our final boils in March, we've been very happy with it.

It's well built, straightforward to operate, and has been a great fit for the size of our operation. There's also something pretty satisfying about feeding the fire and watching all that walnut sap come to a rolling boil.

Over the next few weeks, we'll spotlight some of the other equipment we use behind the scenes - from collecting and processing sap all the way through finishing and bottling.

A little look back at our 2026 black walnut syrup season. 🌳

Early the spring, while temperatures were still bouncing between freezing nights and warmer days, we tapped our black walnut trees and collected sap for syrup.

From collecting sap to running it through The RO Bucket and finally boiling it down using our evaporator from Bassett Maple Co., there was definitely a lot learned during our first season - and we ended up with some pretty great black walnut syrup!

Hard to believe we're already looking forward to tapping the trees again next spring...although February still feels a long way off if you ask us 😁- it's really only a handful of months away!!!

AE Green Thumb is our family farm behind Ely Black Walnuts & Syrup and EEz BEEz where we grow and produce black walnuts, black walnut syrup and local honey right her in Hamilton County.

A little update to our page!

Ely Black Walnut Hulling is now Ely Black Walnuts & Syrup. 🌳

We'll still be your local black walnut hulling and buying location this fall, but we've been busy finding another use for our black walnut trees - making black walnut syrup!

And while we're talking about things producing right here at home, be sure to check out EEz BEEz for Evan's local honey. 🍯🐝
