Seafood Boil
Ingredients:
3 lemons divided use
1/2 cup Old Bay seasoning plus more for garnish
8 cloves garlic smashed
1 onion peeled and cut into 6 pieces
1 pound small Yukon gold potatoes halved
4 ears corn on the cob cut into 3-4 inch pieces
3 lobster tails
1 pound clams scrubbed
1 pound crab legs pre-cooked
1 pound smoked sausage cut into 1 inch pieces, kielbasa or andouille are preferred
1 pound shrimp peeled and deveined (leave tails on)
3 tablespoons butter
2 tablespoons chopped parsley
Preparation :
Cut 2 of the lemons into quarters. Slice the remaining lemon into wedges and reserve the wedges for garnish.
Fill a large pot with 14-16 cups of water. Place the 2 quartered lemons in the water along with the Old Bay seasoning, garlic and onion. Bring to a boil.
Add the potatoes to the pot and cook for 8 minutes.
Add the lobster tails and cook for 5 minutes.
Add the clams, crab, and corn, and cook for 5 minutes.
Add the shrimp and sausage and cook for 2-3 minutes.
Drain the seafood mixture from the pot, reserving 1 cup of the broth.
Melt the butter in a small bowl and whisk it into the reserved broth. Pour the broth over the seafood mixture.
Garnish with chopped parsley and lemon wedges. Sprinkle with additional Old Bay seasoning to taste, then serve immediately.

Gumbo greens with a bacon pimento corn muffin 🔥
RECIPE BELOW:

gumbo greens
1.5 lbs collard greens, washed and chopped
1/2 cup vegetable oil
1/2 cup all purpose flour
1 onion, quartered
2 partially cooked smoked turkey wings (or one leg)
1/2 cup bell pepper, chopped
2 stalks celery, chopped
1/2 tbsp secondline creole seasoning
3 cloves garlic, minced
5 cups chicken broth
1-2 andouille sausage, cut in 1/2 inch pieces
10-12 raw shrimp, deveined and tail off
1/4 tsp cayenne pepper
1 tsbp garlic powder
1/2 tsp celery seed
1/2 tsp onion powder
2 tsp smoked paprika
1/2 tsp salt
1 tsp oregano
1 bay leaf

Add wings or leg to chicken broth to cook while you work on the next few steps.

Over medium heat add vegetable oil and mix in flour, whisking so there are no lumps. Cook until you get a dark brown color, stirring constantly and careful not to burn it!

Add in vegetables and stir to coat in roux. Allow them to soften and then add garlic, cooking until fragrant, 1 minute.

Add in seasonings and bay leaf. Next add the broth slowly and stir. Add in wings or leg and greens. Bring to a boil and then reduce heat and simmer, checking for doneness around 50 minutes. It may need to go longer.

Remove meat and pull from bones and return to pot. Add in sausages and cook for approximately 10 minutes before adding shrimp. Cook shrimp until they lake a nice "c" shape and have a nice pink color.

The onion has been grown and selectively bred in cultivation for at least 7,000 years. It is a biennial plant but is usually grown as an annual. Modern varieties typically grow to a height of 15 to 45 cm (6 to 18 in). The leaves are yellowish- to bluish green and grow alternately in a flattened, fan-shaped swathe. They are fleshy, hollow, and cylindrical, with one flattened side. They are at their broadest about a quarter of the way up, beyond which they taper to blunt tips. The base of each leaf is a flattened, usually white sheath that grows out of the basal plate of a bulb. From the underside of the plate, a bundle of fibrous roots extends for a short way into the soil. As the onion matures, food reserves accumulate in the leaf bases, and the bulb of the onion swells.[14]

The onion plant has a fan of hollow, bluish-green leaves and its bulb at the base of the plant begins to swell when a certain day-length is reached.
