Blueberry Crinkle Cookies

Ingredients

* 1 cup fresh or frozen blueberries
* ½ cup granulated sugar
* ¼ cup brown sugar
* ½ cup unsalted butter, softened
* 1 large egg
* 1 tsp vanilla extract
* 2 cups all-purpose flour
* 1 tsp baking powder
* ¼ tsp salt
* ½ cup powdered sugar, for coating

Steps

1. Cook blueberries for 5–7 minutes until jammy, then blend until smooth. Cool.
2. Beat butter, granulated sugar, and brown sugar until light and fluffy.
3. Add egg, vanilla, and blueberry puree. Mix well.
4. Whisk flour, baking powder, and salt. Gradually mix into the wet ingredients.
5. Cover and chill the dough for at least 1 hour.
6. Preheat oven to 350°F (175°C). Roll dough into balls and coat generously with powdered sugar.
7. Bake for 10–12 minutes.
8. Cool for 5 minutes on the baking sheet, then transfer to a wire rack.

Brown Butter Coffee Toffee Cookies

Ingredients

* ½ cup (113.5 g) unsalted butter
* 1 tbsp espresso powder
* ¾ cup (165 g) brown sugar
* ¼ cup (50 g) granulated sugar
* 1 large egg
* ½ tbsp vanilla extract
* ¼ tsp baking powder
* ½ tsp baking soda
* ½ tsp salt
* ¼ cup (175 g) all-purpose flour
* ½ cup (80 g) chocolate toffee bits
* Flaked sea salt, for topping

Steps

1. Brown the butter in a saucepan until golden and nutty.
2. Transfer to a bowl, stir in espresso powder, and refrigerate for 1–2 hours until solid.
3. Beat browned butter with both sugars until fluffy.
4. Add egg and vanilla, mixing until smooth.
5. Whisk flour, baking powder, baking soda, and salt. Mix into the wet ingredients.
6. Fold in the toffee bits.
7. Shape dough into balls, flatten slightly, and refrigerate for a few hours or up to 24 hours.
8. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
9. Place cookies on the sheets, sprinkle with sea salt, and bake for 11–13 minutes.
10. Cool for 5 minutes on the baking sheet, then transfer to a wire rack.

* 1 tsp lemon zest
* 1 cup blueberries
* ¼ cup powdered sugar

Steps

1. Mix 4 oz cream cheese, powdered sugar, and ½ tsp vanilla. Freeze for 30 minutes.
2. Whisk flour, baking soda, cornstarch, and salt.
3. Beat butter and remaining 4 oz cream cheese. Add sugars, egg, remaining vanilla, and lemon zest.
4. Fold dry ingredients into the wet mixture, then gently fold in blueberries.
5. Flatten dough portions, add cheesecake filling to the center, and seal the dough around it.
6. Bake at 350°F (175°C) for 11–13 minutes until lightly golden.

Ingredients

* 1 cup sourdough discard
* 1 cup all-purpose flour, plus extra for rolling
* ½ tsp salt
* 2 tbsp olive oil or melted butter
* Water, as needed

Steps

1. Mix sourdough discard, flour, and salt.
2. Add olive oil or melted butter and mix until a soft dough forms.
3. Add water, 1 tbsp at a time, if needed.
4. Divide the dough into equal pieces and roll into balls.

Ingredients

* ½ cup quick oats
* ¼ cup peanut butter
* 2 tbsp honey
* ¼ cup mini chocolate chips

Steps

1. Mix oats and chocolate chips in a bowl.

* 1 cup diced apples
* ½ cup powdered sugar, for glaze
* 1–2 tbsp apple cider, for glaze

Steps

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream butter and sugars until light and fluffy.
3. Mix in egg, vanilla, and apple cider.
4. Whisk flour, baking soda, cinnamon, nutmeg, and salt.
5. Gradually mix dry ingredients into the wet mixture.
6. Gently fold in diced apples.
7. Scoop dough onto the baking sheet, spacing cookies about 2 inches apart.
8. Bake for 10–12 minutes until edges are set and lightly golden.
9. Cool for 5 minutes, then transfer to a wire rack.
10. Mix powdered sugar with apple cider and drizzle over the cooled cookies.
