I am posting about dinners that your celiac family may love, as I make my dinners with gluten free ingredients and we will one day have a cafe dedicated to the celiac and autoimmune compromised community.

This is a favorite in our family and so very easy, ready in less than 30 minutes. It's also budget friendly. I have four of the toughest judges and they go back for seconds!

Tuscan Chicken: chicken in a Parmesan cream sauce with spinach served over rice (in the insta pot).

This was one of the favorites from this past weekend: Lemon Angel Food Cake.

People who didn't even like angel food cake loved the texture and taste. If you are a lemon fan this is for you!

This is it: think I am calling it the Beltane Cake. Lavender infused honey injected into a delectable pound cake and a shimmy of lemon glaze on top. Perfect for spring and to celebrate the longer days ahead of us.

Will have this beauty on Saturday for everyone to try, come get you a slice, it's worth the drive to Seneca I promise. 😉🪻🍋

PS: no wheat flour was harmed in the making of this cake, it was left out. 😁
