Stacy Orseck is the founder and Queen Bee of The Bee and the Baker, a bakery free of gluten, dairy, soy, corn and processed sugar. Stacy has been involved with healthier living for over a decade. As a Certified Holistic Health Counselor and a 2007 graduate of the Institute of Integrative Nutrition, Stacy has been actively coaching clients on healthy eating, living and happiness. After her husband
was diagnosed in 2012 with Crohn's Disease, Stacy worked to design a diet omitting gluten, dairy, complex carbohydrates and several other foods (largely based on the Specific Carbohydrate Diet “SCD”) in order to help him battle his illness.
She became aware that baked goods free of these ingredients were not readily available. Even gluten free options typically contained preservatives and various starches or gum additives. In 2013, Stacy began baking all natural breads, cookies and cupcakes, largely with locally sourced ingredients and free from processed chemicals. After refining her recipes over the course of several years, friends and family encouraged her to offer these goods to a wider audience, which resulted in the birth of The Bee and the Baker in 2016. All products contain healthier flours and oils than the typical gluten free bakery and are intended to be delicious treats to add to any healthy diet. Stacy lives and works in Westport, CT with her husband, two teenage daughters and two Portuguese Water Dogs.
