BURGUNDY IS A BOTANICAL EVENT.

This color isn’t painted onto the petal. It’s made inside it.

Anthocyanins—the pigments behind many of the reds, purples and blues in plants—accumulate in the cells while light passes through and reflects back out.

Which is why a petal can look like velvet even though it’s almost weightless.

Pigment + tissue + sunlight.

Plants invented color before we ever gave it names.

THE ORCHARD HAS TENANTS.

Apples overhead. A paper city in the middle.

What looks like a gray ball is layer upon layer of plant fiber, chewed by wasps and rebuilt into paper.

Wood → pulp → architecture.

No lumberyard. No blueprint. No Home Depot.

Just mouths, cellulose and collective intelligence.

Meanwhile, the tree keeps making sugar.

An orchard is never only an orchard.

PHOTOSYNTHESIS, LITERALLY.

Plants are built from an ongoing relationship with light, but they also alter it everywhere they grow.

Filter it. Block it. Reflect it. Turn it green. Throw it against the wall in the shape of a leaf.

A plant makes two things at once:

BEFORE REFRIGERATION, THERE WAS THE RAFTER.

Hang it. Dry it. Ferment it. Salt it. Put it in oil, alcohol, honey, vinegar.

Autumn is basically an ancient storage problem.

For most of human history, the abundance of summer meant very little if you couldn’t figure out how to carry some of it through winter.

Drying is beautifully low-tech: remove enough water and you slow the microbial and enzymatic processes that turn fresh plant matter back toward the earth.

Medicine hanging from the ceiling.
Seeds in paper packets.
Roots in the cellar.

The original pantry was a preservation system.

PLANT VISION.

We see green because chlorophyll absorbs red and blue wavelengths and reflects much of the green back at us.

Which means the color we call “plant” is, in a sense, the light the plant didn’t take.

Some of what’s absorbed becomes the energy that drives photosynthesis—light into chemistry, chemistry into sugar, sugar into leaf, root, flower, fruit.

A garden is light becoming matter.

We just happen to experience some of what returns to us as beautiful.

HOPS.
Humulus lupulus.

Green, sticky, bitter little nervous-system flowers.

Underneath those papery scales: golden lupulin glands packed with aromatic resins and volatile compounds—the chemistry behind that unmistakable bitter, resinous smell.

Humans put them in b**r. Herbalists put them by the bed.

Hops have a long history of use for restlessness and sleep, gathered while the cones are still green and fragrant, then dried before their chemistry and scent disappear with the season.

Bitter plants have a way of getting our attention.

Harvest accordingly.

A squash blossom, from the inside.

That impossible yellow-orange isn’t ornamental. It comes from carotenoids—the family of plant pigments responsible for many of the yellows, oranges and reds we see in flowers, fruits and vegetables.

Some carotenoids, including beta-carotene, can be converted by our bodies into vitamin A. Others, such as lutein, have functions of their own.

Up close, the blossom looks almost anatomical: veins, translucent tissue, folds of pigment and light.

A flower built to last barely a day, carrying chemistry that moves between plant, pollinator and eventually, if we eat it, us.

September has no restraint.

Everything arrives at once—the tomatoes still ripening, peppers by the handful, Brussels sprouts forming along their strange stalks, winter squash hardening, corn drying down.

The garden doesn’t really understand our clean divisions between summer and autumn. One season is still fruiting while another is already preparing for storage.

For a few weeks, the whole year seems to be on the table at once.
