What’s this 3 digit number? This three-digit code indicates the date of packaging, starting with January 1 as 001 and ending with December 31 as 365. These numbers represent the consecutive days of the year. For example, this egg carton with a packaging date of 194, means the eggs were packed on July 13th.

This is the packing date. These eggs were likely layed around 45 days prior.

This is why we select all of these varieties in our operation. These roots will run deep extracting buried nutrients and depositing others making them available for our next crop. Cover crops protect topsoil and those big root systems are loosing compacted soil.

Cereal for breakfast is something I cringe at. The cereal aisle at the store is FULL of sugar and hidden ingredients and is so unfair to set our kids up for a sugar and energy crash just as they begin their day.

Try this long fermented sourdough granola to swap out in the mornings!

Yesterday the rain day was timely as Charlie and Matt were invited to attend a seminar with some visiting Ukrainian farmers. The Ukraine farmers have had many hardships since Russia’s invasion. Did you know that Ukraine is the worlds third largest exporter of corn? It’s important to remain a global citizen in agriculture and this was a great opportunity to compare notes on priceless and solutions in the field with other agricultural leaders.

Tonight we were invited to share our farm business journey with the Algona FFA and Tietz Entrepreneurial Center.

Future Farmers of America. What an honor to hold such a title. We hope we encouraged some of these young people in agriculture to realize their worth right here in our community. That they don’t have to move to the city and find a corporate job to be successful if their dreams lie in a tractor cab or cattle pasture. There’s so much opportunity right here in rural Iowa.

We sat in during their formal meeting and were so impressed. These kids DO have the skills that FFA is about. They are the future leaders of our industry and it was an privilege to possibly help shape their future.

It’s also a reminder of the work we have put into our business - we could have talked for days 😅 it’s like catching up with an old friend when you get to talk about something your so passionate about. It’s been a lot of years since I’ve given a presentation but this was by far the easiest one.

How do we do it? Go to work 365 days of the year no matter the weather, no vacation days, sick days or personal days? We don’t clock in or out. We don’t have set hours. We, the entrepreneurs of agriculture, are a different breed.

So what’s the secret?

PASSION.

In the business of agriculture you must have a passion that runs so deep you cannot see past it. You will fail. You will fail more times than you’d ever like to admit. You’ll work through the night and the day. You’ll work those terrible hours in rain, snow and blistering hot conditions and without passion for your land, livestock and legacy it wouldn’t seem feasible.

To be in the day to day operation of an agricultural setting, where you’ve got skin in the game you must show up with your whole heart every single day of the year.

In what other profession would you bet your entire income on the weather? And on the markets to be able to break even?

Only in a profession of agriculture you’ll see the strongest faith put on display trusting a seed to grow with timely rain and sun. Entrepreneurs in agriculture lead a lifestyle where how successful they are may not always show up in their bank account but it will be found in the core memories of their children and grandchildren and on display in the very character that builds. A lifestyle where work, play, faith and family are entirely the same.

A lot of time driving down the road I try and imagine how the landscape has changed over the course of time. Original farmhouses still stand and house families across the countryside who’s views through their windows have evolved from virgin prairie to the way today’s tenants see its use fit.

Meet the Kollasch men, whom have each pioneered in their own time, entrepreneurs in agriculture. Who have held on and dug in sometimes with luck but over and over again with skill and determination, patience and God at the forefront.

As, Matt’s grandpa writes, ‘it is truly a story of a family’s love for the land and their desire to succeed against the many hardships that the prairie confronted them with..’

We humbly carry this legacy into the 5th and 6th generation where we no doubt still use lessons learned and handed down by sight from these great men and women as leaders of our success.

What a fun summer learning all there is about grazing pigs! There’s nothing more satisfying than putting your own food on the table. We searched a long time for a breed that would fit our operation and last winter we were very excited to add Idaho Pasture Pigs to the farm. As you can see, they’ve got beautiful dark meat, enough fat for excellent flavor but not too much to take over the meat:fat ratio.
We developed our own organic feed mix in addition to their grass needs.
They’re the best pigs, so friendly and happy!
In 2024 we will offer reservations for 1/2 or whole hogs. You will not want to miss out!

We were lucky to have our farmer home yesterday with all the rain. He enjoyed some of the cherry shrub I had made earlier in the week and it was delicious! I’ll post the recipe in the comments. Highly recommend these take or toss containers and meals that can go all in one!

Breakfast for dinner is on the calendar for tomorrow - the kids most favorite!

I love these little signs that greet me at each field meal delivery. They remind me we’re doing some good out there. They also remind me my husband doesn’t have to be exposed to chemicals to continue into the 5th generation of farming. Big ag doesn’t win here.

I mentioned yesterday about knowing your farmers practices and I truly truly believe in that statement. While product labels are a good place to start there are still many ways organic farms (esp big organic farms) can bend the rules or not have the right goals. There are certified organically farms that follow organic protocol and loose massive amounts of soil annually and are actively not working toward adding more carbon back - treating problems at sight.

We use the term regenerative often and what this means to our farm is that we are doing everything we can to restore the land we steward using nature as a guide and zeroing in on the cause of the problem. If we get bugs, we aren’t spraying for those bugs - we look at our soil and search for the nutrient that is missing to create a weak link making it hard for a healthy plant to resist an infestation. When we have a patch of wanted plants (aka w**ds) We’re looking at what the w**d is thriving on and why we have an abundance and how we can balance our soil to reduce them downing out our crops.

Sometimes we lose. All the time we learn and it takes a lot of brainpower to put the puzzle together to make it all work.

That’s what we’re about - the moving parts must all work together. We are one of those parts. Would we feed a filler to get by? Nope. We simply will not. Because it never changes from just that, a filler.

Does it really matter for you? That’s up to you. Do you want an ‘all inclusive deal’? Or you an a la cart shopper? Products that leave our farm are nutrient dense meaning they contain what your body needs and what our livestock need to thrive. Are you buying factory farmed products and missing out on what your body needs to complete it’s functions? Supplements are great but more supplements doesn’t equal health.

Knowing your farmers practices is important and we transparently show you ours because we strive for the best.

The kitchen is BUSY today! There’s a chill in the air and we’re prepping for winter.

Remember the broth benefits are extracted from the bones so make sure you’re sourcing NUTRIENT DENSE animals! Know your farmers practices :)

We prepped our English muffin dough yesterday with our sourdough discard. We will cook these and then make some breakfast sandwiches (featuring kids coop eggs of course) and the first pork from our farm 👏🏻 for the freezer for a quick east and filling breakfast this harvest.

Fire cider will brine for about a month before we can dig into its immunity benefits. Our batch will include: onion, garlic, cayenne, honey, ginger, horseradish, lemon, orange, rosemary, thyme, cinnamon, star anise, cloves, hot peppers

If you’re still reading hooray for you! Why are we doing all of this? For wellness. It takes a real effort to provide your family with good food, it’s not easy anymore. The stores are so filled with processed ready to eat convenience foods and unnecessary ingredients it’s honestly hard to find the real food. You might be thinking.. how nice, a stay at home mom baking but this isn’t that folks. My time is valuable and I’m more than appreciative that my husband acknowledges that and allows me to be here while he provides for our family. Nourishment takes time and commitment - education and skill and I don’t say that to intimidate you from making the effort to provide the best for your family. Today I challenge you to find a small piece of knowledge to add to your nourishment arsenal. Don’t let society rob you of your wellness.

If you start to see lots of feathers around your chickens might be experiencing their annual molt or shedding of old feathers and growth of new. Lots of times I think we may have had a predator and then realize it’s MOLTING time!

Typically, this will occur anywhere from august-November annually in mature hens and is largely controlled by daylight among other factors that can throw a bird into an ‘unscheduled’ molt.

What can you do to help them through?

🐔Up their protein. Feathers are around 85% protein so they will be using a lot!

💤Let them rest! Egg production will drop during the molt and during the shorter days. I am a big believer in not fighting Mother Nature (she’s so smart!). They need this time to use their energy to recoup. Shut off lights at night.

🤕Molting is fairly uncomfortable for the birds so we make sure to handle them as minimally as possible.

😣Reduce stress. Refrain from moving the flock or adding new members.

🐓This is a good time to check your feed to make sure your flock is getting a complete feed with all the pre and probiotics, key vitamins, minerals and amino acids needed. A great time to introduce fermented feeds!

We have around 40 pullets starting to lay which means LOTS of small eggs. We love pullet eggs but can only eat so many!
They’re the perfect size for a snack so we stored some away by picking them!

Spicy Pickled Eggs

Combine all of these ingredients in a saucepan:

2 cups white vinegar
1/2 cup water
1/2 cup white sugar
1 teaspoon salt
1 teaspoon pickling spice
1 teaspoon red pepper flakes
4–5 cloves
1 cinnamon stick
2–3 hot peppers, cut into slices
1/2 red pepper, cut into strips
A few rings of a freshly cut white onion

Summer 15 minutes

Put peeled eggs in a jar, top with brine leaving 1/2 inch headspace. Place clean lid on and refrigerate a minimum of 2/3 weeks

Our story begins in a small town...

Beef meticulously raised by a 5th generation farmer and a culinarian. Husband and wife team, Matt and Hilary, began raising cattle to provide quality beef to their family. It didn't take long before there were several order requests coming in. Their farm is located just outside of Whittemore, Iowa, where they run their Pinzgauer cow-calf operation. Cattle are raised in open spaces, in a natural enviroment during the majority of the year. They are never given hormones or GMO's and primarily receive organic grains. We truly beleive that raising an animal naturally is a pillar for the exceptional flavor.

Our goal is to provide you with the same quality beef we put on our own table. We hope you enjoy every bite as much as we do, knowing the high standards and committment we put into raising our beef.
