As a family we enjoy the outdoors including picking morel mushrooms, hunting, camping, fishing, and of course, making maple syrup. Our four teenagers are the heart and soul of our operation, without their hard work and dedication we would not be able to tap, collect or boil to the capacity we are today. We begin each spring by installing approximately 600 taps in the sugar maple tree. We hand coll

ect our sap in the spring of the year when the temperatures begin to warm during the days and freezes at night. It takes generally 40 gallons of saps to make one gallon of syrup! We transfer the sap to our evaporator to boil to get it to the correct density. We have a 2’ x 8’ stainless steel Amish built wood fired evaporator. Sap generally contains 2.5% sugar when collected. And when finished, the syrup will reach 219 degrees and contains 66% sugar. We filter to remove sugar sand and when the syrup is at a minimum of 200 degrees we bottle in glass jars. Our syrup is 100% pure!
