*Egusi Soup- The egusi in egusi soup is actually ground melon seeds! They are cholesterol free and rich in essential fatty acids, antioxidants and minerals, and possess major nutritional benefits. In West Africa, it has been said to help intestinal disorders, bacterial infections, jaundice, asthma, and diabetes.
*Red palm oil- offers various health benefits due to its high concentration of antioxidants, including carotenoids and tocotrienols, which contribute to vitamin A and vitamin E levels. These antioxidants protect against cell damage, potentially reducing the risk of certain diseases. Red palm oil may also support heart health by potentially reducing atherosclerosis and improving brain function. Additionally, it can help prevent vitamin A deficiency and may offer anti-inflammatory effects.
*About your Fufu-
FUFU? It's actually called "swallow" and is a type of swallow. Though it may look like dough, it's far from it...they are however different kinds of starches. You have Pounded Yam, Eba (ground cassava), Amala, Semolina, Plantain Fufu, Oat Fufu, Wheat, and many more!
Pounded yam is the swallow we serve here at Continental Cravings. Pounded yam is made from an African yam, which is a white flesh root vegetable that is like a potato but more dense and starchy. Without being dipped in a soup, it has very little flavor. It's prepared similar to mashed potatoes since you peel, cut, and boil the yams before "pounding".
