For me, Temp control and proper internal food temps are probably the most important aspects of creating great BBQ. Just how important ? Important enough that I started out the 1st Official Georgia BBQ Day by reorganizing my instruments of temperature measurement. More to come as I recognize the inaugural day of Georgia BBQ.

just a little something to help with the cold night ahead. If you haven't tried Steak Princess BBQ rubs yet then there's really no excuse so you need to find some and try some,because when I tell you that Cajun Firefly Dust took this gumbo to a whole different level......felt like I was in the bayou. since dessert was taken care of I took the liberty of taking care of dinner with the help of Marty Plute ( Twisted Steel Lima Loca), and Rylee Steak Princess Wright (Fiesta Rub). Finally got to use my ulu from Can't go wrong with GrillGrate for the win on the chicken and the tortillas
