African American Cuisine or what’s more commonly known as “Soul Food” originated in mid 1960’s when the word soul was frequently used to describe African American Culture. A lot of soul food recipes date back to African influences specifically West Africa. Meals such as ribs, fried catfish, chitterlings, fried chicken, collard greens etc… are what comes to mind when ever soul food is mentioned nowadays.
But contrary to beliefs soul food origins was more of a plant based diet with such foods as yams, black eyed peas, rice, Okra fruits and berries. Overall soul food provided a well balanced diet packed with clean carbs good sources of protein and fats.
