Movie or game day platter

I made this platter for my son and for movie night… John Wick 4 😂 because I wanted something we could grab and hold and make very little mess. Left for a long.

So we started with lemon pepper, wings, air fried from frozen until thawed than seasoned and back in the air fryer for about 15 minutes flipping once. Homemade lemon pepper seasoning was added, and in the bowl when I took them out.

Potato wedges were cooked with the wings after being oiled and seasoned with seasoning, salt, garlic, and onion powder. I did it in batches, then redid it until everything was crispy and ready. The final lemon sauce added to the wings catchup for dipping for the fries.

I saw a recent video on some food site on making pastry phyllo dough vegetable delights, and I couldn’t find it again so I took parchment paper and a cookie sheet, made four areas with olive oil, onions , fresh herbs, tomatoes, and jalapeños… Not a lot then I cut four squares out of thawed phyllo dough and covered each of the four areas. I painted butter over all the edges and the top of the dough so it will get crispy well the vegetables cook below. These can also be done with fruit, cream cheese, whipped cream, for a dessert style or with virtually any other option like bacon, egg and cheese!!! What

These baked for about 15 minutes in a 380 oven until brown then I simply used a spatula and flipped them onto the platter and that’s what you see. It was buttery flaky delicious! You can also add other things once it is cooked, but this was plenty for us.

So chicken wings, french fries, and vegetable pastries with crumbled blue cheese, dressing, celery, and ketchup for the fries and your favorite beverage. Easy to do for six or more! Enjoy.😎😋

My final presentation I’m submitting for a challenge, and  Culinary advancement opportunity.

Practicing for a presentation, my first black slate 2 plate meal.

This is a pan seared bacon wrapped filet served on grilled lettuce with split pea horseradish purée, steamed egg yolk, black lava sea salt . The coral tuile was required for each dish, but I couldn’t get the green to work so I added the egg yolk last minute, so I could make a yellow tuile . - These are really easy!

Paired with a white spoon serving with yellow tail sashimi , with a vinegar sesame scallion base, red tobiko . Hoping my dad cook experience can lead me to a culinary career for my retirement years. Cheers!!😎🙏🏼😋

Buttermilk fried chicken with rice spinach and mushrooms

This was an experiment inspired by the flowers in the yard, and some videos I was watching… so I found out how to make the coral decorations with just water, oil, flour, mix together and add food coloring , stir well, into a hot skillet, and it  start boiling and cook down and then, when the bubbles stop, you peel it off. It will make its own design. Really fun to play with!

So I took leftover rice and pressed it in a pan and baked in the oven for about 15 minutes . I took it out and cut it into squares. Then I sautéed in butter until brown on each side. This was the base of the plate.

A handful of spinach was melted down with some leftover bacon grease and stirred lightly and set aside, and eventually a top the rice. The chicken was marinated in a buttermilk hot sauce and spice marinade all day, then dipped in spice flour back in the egg wash And cooked in the iron skillet for several minutes on each side until brown. For the final heating I added some honey and a little red pepper for a glaze and put it on the top on the skillet and let it melt into the chicken. The chicken was super tender.

I used a handful of chopped mushrooms, sautéed in butter for the red wine for a few minutes on each side instead of side and kept warm with the spinach. And then made the coral decorative pieces.

Just some thing I always want to try and I have a fellow chef give a link to a YouTube showing how to make it. Very easy using one heavy tablespoon of flour, 2 tablespoons of oil, and 1/3 cup water. Mix together and add food coloring for the color you want. I use Yellow for the yellow flowers and was trying to get a bright red but I added some sun-dried tomato oil in the mix for red to give it flavor, and that’s as bright as I can get it.

These are simply poured into a hot nonstick skillet and you can make them as big as you want or as small as you want and they will cook down and stop bubbling and they simply peel off. It’s that simple but it makes a really cool decoration if you want to get fancy! A lot can go into making those flavorful and a major contribution per flavor, but this was just playing the first time.

The chicken was super tender , some of the coral around flowers I  had from around the yard. So I use yellow food coloring for the yellow coral and that came out really well. The red was a little harder to get bright red. Then I also added some sun-dried tomato oil to give it flavor, which took away some of the red brightness, but it worked either way. Simply decorative, but if you can add more flavor to it, it will give, not only the presentation but a contribution to the flavor palette. The flowers were not eaten. They were just used in each photo.

This was fun and something to play with your food in the kitchen with. Always practice and learn from others and it keeps you always making something interesting in the kitchen. I always find my favorite music and create dishes from everything I see and have. Some of the dishes are quite unique, but fusion is what I like and the flavors go really well together. Enjoy.

Jumbo lump crab cake

Tonight I made crabcakes using lump crab, mayo, Dijon, egg, breadcrumbs, old bay, salt, and pepper mix by hand, ensuring the cake does not get too mixed and pan seared in butter three minutes on each side.

In an iron skillet, I cooked a half a cup of bacon, chopped remove the cooked bacon, and added, chopped brussels sprouts, dusted with nutmeg and cooked slowly on the stove for about four minutes, then into the oven for 15 minutes at 400 for browning

And then sautéed 2 cups of spinach, some green onions, then poached an egg and made a béarnaise sauce, egg butter, lemon, chervil and tarragon for a nice béarnaise sauce. The crabcake was on top of the spinach and onions with the egg Invermay sauce with the brussels sprouts on the side, a little lemon finishing off this delicate meal that was full of flavors. Breakfast or dinner or anytime, this makes a great protein meal with a twist on an eggs Benny . Enjoy!!😎😋

Blackened salmon with black bean and corn salsa

Easy blacked salmon using Emeril Lagasse blackened seasoning on the salmon , pan seared on both sides for 3 min each in hot iron skillet with 2 tbs olive oil and 2 tbs butter.

Shrimp were sautéed in butter, old bay and cayenne until done while the grits cooked and salsa was made. Salsa is fresh chopped onions and peppers, canned black beans and corn , Tony’s seasoning with Tabasco and Rotel tomatoes mixed and served cold.

Grits are yellow stone ground and cooked in beef stock, salt pepper , butter , 1/2 cup Gruyere cheese and slow cooked for 30 minutes.Dish was created with the influence of flowers growing now around the property highlighting yellow and red which is how I thought of the salsa with the fish. The grits were rich but not too rich and very filling with the sautéed shrimp and blackened salmon. Black Hawaiian lava sea salt .Super easy to make and cook time was less than 45 min. Bon Appetite! 😎😋

Breakfast for the team

Traveling in Phoenix this week with five other collegeues, so we got a large air BNB and I offered to cook for the team so we could have meetings and saved a ton money by not getting 6 hotel rooms and eating out in downtown . There were 7 of us total and are from China, Mexico, and US TX and GA so feeding them was chore but we had plenty and could relax and work and entertain clients .
Breakfast, each morning was generally fried eggs, scrambled eggs, sausage, bacon for the Texas crew, then veggie frittatas for most others using tomatoes, peppers, green onions, and spinach and whipped eggs with no cream for a lighter version requested. Some just had fruit but produce was available and we all stayed hydrated and could choose what they eat. I cooked all each morning and it easily satisfying their appetites, so I’ll post our dinners after the trip . Cooking in did save a lot so happy to help. More to come from Phoenix !

Steamed Lobster with pan seared Ribeye

My local Asian market carries fresh fish and lobster and the Maine lobsters were on sale for $9.99 a pound so I took advantage of it for a birthday dinner for my son. I got 3 pound and a half lobsters and two small ribeyes about 9 ounces apiece and decided to have a lobster feast.

Having grown up in New England for a few years of my life, I already have a lobster pot, and we always stock plenty of crab boil so I simply filled the pot with water, put in two bags of crab boil, and shook some old bay into the water once it started boiling. Put the lobster in the boiling water live and be sure they are fully submerged. Boil at a steady boil for about 10 minutes. Remove to rest. It’s best to do this in a pan has a lot of water will come out of the shells.

In an iron skillet are use some butter and got it pretty hot, cover the ribeyes with salt, pepper and garlic powder and seared on one side for about three minutes then added a half a stick of butter, fresh rosemary, and thyme, and turn the steaks over to the other side. Being that these were not thick, I did not sear the sides like I would a 1 inch thick steak. I did baste the steak with the boiling butter with herbs, keeping the top, wet and cooking continually till I can reach an internal temperature of 125 to 130°. I like it medium rare if you’d like it more cooked, cook it for longer and use it for manometer and look for your desired temperature.

Once cooked, I remove the rest and added mushrooms and a little red wine into the pan and sautéed them for about five minutes. Flipping wants. Are used one baking potatoes, chopped into cubes covered in oil and herbs and roasted in the oven for 20 minutes.

For the two plates there was nearly 3 pounds of meat, so we plated using the head and removed claws, cleaned all the meat out of the body and tail and served it around the lobster, body with the fresh carved steak, the mushrooms and the potatoes and two sticks of clarified butter. I know the only thing green was fresh parsley, but they’re just wasn’t room for anymore. I sprinkled a little more old bay on top of the lobster once we cleaned it and covered all of it with butter before serving. It’s not often but we get to try this, so it was certainly worth it and we enjoyed every bite of it.The total dinner only cost $52 for 2 so not bad for staying hime ! Bon appétit.

This is a triple taco plate using Carne Asada… flank steak, sliced, thin and cooked in a little oil with taco seasoning. And I did an all veggie one with sautéed onions peppers, chopped lettuce and tomatoes, then a sautéed chicken taco.

Each one had sautéed onions and green peppers, homemade guacamole, Oaxaca cheese, I used a Verde sauce on the chicken and a traditional red and Chilada sauce on the beef taco. The veggie taco with cheese, pretty much held its own with fresh cilantro on each then some Mexicorn I cooked in the toaster oven rolled in mayo with chili powder, smoked paprika, and Parmesan.

I used flour tortillas, but you can use hard corn or soft corn tortillas as well, feta cheese, if you want closer to a street taco, but these are quick and easy to make and everything was fresh. Great for taco Tuesday or in this case taco Friday for Cinco de Mayo.

Philly cheesesteak

I shaved 3 pounds of prime rib after cooking it in the oven for 45 minutes and then sliced thin and nice and rare. And then threw them in the pan with a little bouillon and W sauce allowed it to absorb the flavors and spice it up a bit with salt, pepper and garlic.

Separately, I sautéed two onions and two peppers, chopped and cooked until done and set aside. And then placed a layer provolone over the meat in an iron skillet, chopping and allowing it to mix, then added another layer of provolone and another layer of Swiss cheese, and continued to chop until thick and cheesy.

Toasted a baguette , buttered each side and covered one side with the beef and cheese, the other with the onions and peppers and attempted to combine these into one large sandwich. This was gigantic! Hard to manage and there’s enough to feed four people easily but I served it. It cut in half with some Parmesan sweet potato fries and it was perfect! I could only eat a quarter of it so we have plenty of leftovers but I hear knocking on the door so I have a feeling the rest will be gone soon. I use spicy mayo with the sweet potato fries, which were perfect! Got the meat on sale cheap at 7.99 a pound and had a nice easy meal in less than an hour. Good eats.😎😋

Jerk chicken with Parmesan potatoes

I got some large chicken legs in so I decided to use a jerk, chicken marinade I got at Trader Joe's and marinated them for eight hours to let them absorb the flavors. I added some scotch bonnet, peppers for a little heat, with a little five spice rub with cinnamon allspice, then baked at 400 for about 15 minutes, then I turned them and baked the other side and added a little brown sugar and smoked paprika to give it a glaze.

Chopped up a couple of small red potatoes, drizzled them with olive oil and spiced up a little with seasoning, salt pepper, and baked in the toaster oven for 20 minutes then added Parmesan cheese to give a little crust. Super easy everything done in 30 minutes for a great snack for two with me and my son before getting back to work. Love the jerk chicken flavors gives a little different direction, but these came out super juicy and were cooked until 185 so no worries about being undercooked. Look for any jerk seasoning in a bottle for a marinade should work pretty good as I've never been disappointed and those available on the shelf. Enjoy.!😎😋

Veal and lamb mushroom meatloaf

This is a take on the iconic Buckhead diner in Atlanta that closed and served a veal wild mushroom meatloaf that was the best in town. I had a pound of veal but also in a pound of lamb, so I mixed the two then added eggs, onions, lots of fresh herbs, breadcrumbs formed it into a loaf, and baked it flat on the sheet pan and covered with a spicy, catch-up, based sauce.

Baked until 160 basting with the sauce every 30 minutes and at the end, which is about an hour. Separately I sautéed mushrooms in butter, a little W sauce, and cooked slowly for about 30 minutes, constantly stirring until I got the brown edges and the moisture out of the mushrooms. Added heavy cream, cognac and butter, pepper and brought to simmer and allowed it to reduce. Kept it on low simmer until ready to use.

Then cut Two large baking potatoes into cube and boiled to make mashed potatoes with added milk, butter, roasted garlic, and whipped until creamy with salt and pepper. English peas were boiled and served as the final vegetable with the meal.

Out of the 2 pounds of meat, we were able to get 11 meals or servings, which were quite dense, but juicy and delicious and will make great sandwiches this week one of which is going with me when I travel. This is one of our favorite meatloafs is full of fresh herbs, is good, cold or hot and third day we usually cube it if we have any left over for spaghetti and meatballs!😎😋

For good brunch , this is a chicken fried rice stuffed pepper with rice, chicken ,pineapple, berries, baked with grated Gruyère . Chopped onions and more pineapple made it almost tropical. ! It came together so well, light but hearty. I hear it pairs well with a pina colada😋😎
