Why can good extra virgin olive oil taste bitter or peppery? 🫒
If you've ever tasted a spoonful of robust extra virgin olive oil and felt a little bitterness on your tongue—or a peppery sensation at the back of your throat—you might have wondered whether something was wrong with it.
Quite the opposite can be true.
Bitterness and pungency are recognized positive sensory attributes of extra virgin olive oil. The peppery sensation is associated in part with naturally occurring phenolic compounds, while bitterness is particularly common in oils produced from greener olives.
That's relevant to how we make Kollias.
We harvest our Koroneiki olives early, while they're still green, and our 2025 harvest measured 377 mg/kg polyphenols.
The result isn't an olive oil designed to disappear into the background. It has character: fresh aromas, bitterness and that distinctive peppery finish that so many of our customers mention.
So if Kollias gives you a little tickle in the back of your throat, that's part of what you're tasting.

We spend a lot of time talking about what goes into making Kollias Extra Virgin Olive Oil—from our family's groves in Filiatra to harvest and extraction.
But ultimately, what matters is what happens when the bottle reaches your kitchen.
Thank you, Margaret, for making Kollias part of yours. 💙🇬🇷

Why do we take our olives straight to the mill every afternoon during harvest? 🫒
Because once an olive comes off the tree, the clock starts.
During harvest, we collect that day's Koroneiki olives from our family's groves in Filiatra and transport them to the mill for extraction that same day.
Minimizing the time harvested olives spend waiting before extraction helps protect the condition of the fruit and the quality and freshness we're trying to preserve in the finished oil.
These photographs are from our family's 2025 harvest. They show the actual journey: harvesting in our groves, gathering the olives into sacks, transporting them to the mill, and beginning extraction.
It's a routine we'll repeat again when Harvest 2026 begins this November.
Harvest today. Extract today. From our trees to your table. 🇬🇷

Quality you can measure. 🫒
We talk a lot about the flavor and freshness of Kollias Extra Virgin Olive Oil. But there are also objective measurements that can tell us something about the oil inside the bottle.
Our 2025 harvest was independently tested at:
377 mg/kg polyphenols
0.35% free acidity
Polyphenols are naturally occurring compounds found in extra virgin olive oil. They're valued for their antioxidant properties and also contribute to the bitterness and peppery sensation you may notice when tasting a robust EVOO.
Free acidity is an important chemical quality measurement. Extra virgin olive oil must meet a maximum free-acidity standard, and our 0.35% result is comfortably below that threshold. Lower free acidity can reflect factors including the condition of the olives and careful handling and processing.
We grow our Koroneiki olives on our family's farm in Filiatra, Greece, harvest them early, and take them for extraction the same day.
The result is something we want you to experience in the flavor—but also something we're willing to measure.
Single source. Early harvest. Measured quality. 🇬🇷

Why do we harvest our olives early? 🫒
Kollias Extra Virgin Olive Oil is made from Koroneiki olives harvested while they are still green, before they fully ripen.
There’s a tradeoff: green olives generally produce less oil than fully ripened olives. But harvesting early helps produce the fresh, robust flavor profile we want—including the bitterness and distinctive peppery finish characteristic of high-quality early-harvest extra virgin olive oil.
And harvest is only part of the story. Our olives are taken for extraction the same day, helping preserve their freshness from the grove to the finished oil.
For our family, it’s a deliberate choice: quality over quantity.

What does “Single Source” mean when we talk about Kollias Extra Virgin Olive Oil?
It means our olive oil can be traced back to where it begins: our family’s olive groves in Filiatra, Messinias, Greece. 🇬🇷
Our Koroneiki olives are grown on our family’s farm. We don’t source oils from multiple farms or regions and blend them together.
That connection to the source is fundamental to what Kollias is about—from the olives growing on our trees to the oil that reaches your table.
Our olives. Our family’s farm. Our oil.
One family. One farm. One oil.

We pick our olives early, resulting in a greener olive oil with a more robust flavor. Our early harvest olive oil is rich in polyphenols that offer anti-inflammatory and antioxidant properties known to reduce the disease process, including heart disease.
