MC’s White Chicken Chili
A comforting, no-nonsense white chicken chili. Perfect for cold days like the crap we got goin on now. Bolstered by the full flavor of Bonelava bone broth, duh.
Prep: 20 minutes
Cook: 45 minutes
Yield: 5 servings (3 if Andre is around)
Happiness: Indefinite
Equipment:
Dutch oven or large pot
Ingredients
-4 cups Bonelava bone broth
-Olive oil spray
-2 small poblano peppers, sliced
-1 sweet onion, sliced
-1½ tbsp cumin
-1 (15-oz) can white northern or navy beans, with liquid
-1 bay leaf
-1½ lb chicken breasts or boneless thighs
-½ tsp kosher salt, plus more to taste
-4 (6-inch) corn tortillas
-1 cup sweet corn (fresh or frozen)
-Fresh cilantro, chopped
-Optional toppings: sliced jalapeños, lime wedges, avocado, Greek yogurt or low-fat sour cream, diced red onion, jack cheese
Instructions
1. Preheat oven to 350°F.
2. Build the base:
In a large pot over medium heat, spray lightly with olive oil. Add poblano peppers and onion. Cook until softened, about 5 minutes. Don’t rush it.
3. Bloom the spice:
Add cumin and stir until fragrant, about 2 minutes.
4. Simmer:
Add beans (with liquid), bone broth, bay leaf, salt, and chicken. Bring to a boil, then reduce to a gentle simmer and cook for 25 minutes. Calm confidence is the goal here.
5. Crispy tortillas:
While the chili simmers, stack tortillas, slice into ½-inch strips, arrange on sheet pan, spray lightly with oil, sprinkle with salt, and bake until crisp—about 10 minutes.
6. Shred & thicken:
Remove chicken, shred, and set aside. Scoop out about 2 cups of chili and blend until smooth. Return to the pot along with shredded chicken and corn.
7. Finish:
Bring back to a brief simmer, then turn off heat. Adjust seasoning as needed.
8. Serve:
To serve, top the chili with a handful of tortilla strips, cilantro, jalapeños and any other desired toppings. Don’t be ridiculous. Be appropriate.
