This is some farmhouse cheddar which has aged since last fall, and a Gruyère in the making. It is so delicious with a little spread of strawberries. I have so much fresh Jersey milk right I’m very busy making cheese. Two batches of Gruyère in the cheese fridge should be ready for fondue by the holidays!
