Footehill Farm Our decades of experience growing our own food and making products using permaculture principles We raise chickens, turkeys and the occasional pair of hogs.

10 acre smallholding on a hillside in Colbert in a pine/fir forest in Eastern Washington featuring 17” of precipitation per year, clay and fractured basalt. We are an agroforestry farm using permaculture principles and tools and dedicated to regenerative soil building. We have a one acre market garden farm growing mostly herbs and some produce, including garlic, that we sell through the co op we helped found, LINC Foods (www.Linc foods.com).

Across the United States, a quiet transformation is breathing new life into abandoned shopping malls. Once symbols of retail decline, these massive indoor spaces are now being reimagined as high-tech farms—producing fresh fruits and vegetables all year round. Instead of empty corridors and shuttered stores, you’ll find rows of leafy greens thriving under LED lights, nourished by advanced hydroponic and aeroponic systems.

These indoor farms are designed to maximize efficiency while minimizing environmental impact. By growing food closer to where people live, they significantly reduce “food miles,” cutting down on transportation emissions and ensuring fresher produce reaches consumers faster. Controlled environments also mean crops are protected from extreme weather, pests, and seasonal limitations—resulting in consistent yields throughout the year.

The technology behind these farms is just as impressive as the concept. Automated climate controls, nutrient monitoring systems, and AI-driven growth optimization allow farmers to fine-tune every aspect of production. Water usage is drastically lower compared to traditional agriculture, making this approach both resource-efficient and scalable in urban areas.

Beyond sustainability, these projects are revitalizing communities. Former malls are becoming local food hubs, creating jobs and providing access to fresh, healthy produce in areas that may have previously lacked it. It’s a powerful example of how cities can adapt existing infrastructure to meet modern challenges.

By turning forgotten retail spaces into productive green ecosystems, the United States is showcasing a smarter, more sustainable way forward. These indoor farms are not just growing food—they’re cultivating a future where innovation, resilience, and environmental responsibility go hand in hand.
