I did it! was able to replicate it! Still a couple tweaks to fine tune, but finally feel good about a base recipe! I guess I can call myself a high altitude baker at this point. I even made some Peanut Butter and Chocolate Chip Sourdough Cookies with smoked vanilla sea salt. JAZ BBQ & Baked Goods! 🤣 Now time to try the idea that got me started down this path…a loaf of Smoked Sourdough. Stay tuned!

Boom! Turns out it wasn’t a recipe or process problem, but a starter feeding issue! I’ll always use a 1:3:2 feeding ratio moving forward. A couple tweaks to make to my cooking times, but we got there!

🤬🤬🤬🤬🤬🤬 SOURDOUGH!!!!!!! Arrrgggghhhh!!!!! After 20 some batches, thought I had it nailed. Took the lid off the Dutch oven and did a happy dance in the kitchen. Ry was laughing at me. Crumb felt incredible. Now the long hour of waiting to cut into it. Talk about a swift kick in the nuts! I think I have my recipe dialed in…now for the process. Here’s to the next 20! 🤣

Batch #5 is starting to get a little closer to what Im after. Tried a different recipe and process (and wrote down what I did, so I can hopefully replicate). It’s still crazy to me you get all that sourdough flavor out of water, flour and a dash of salt.

Finally got to start baking. And in 4 days made 8 loafs of bread! Have some work to do, but they’re tasting like sourdou...
