We had so much fun at the Arkansas homesteading conference. Got to meet Joel Salatin again and the kids got to meet him for the first time! We learned some great things and were so encouraged by all the wonderful things going on in AR on the homesteading front. Y'all there are so many wonderful businesses you can buy from rather than going to the big box stores. We are so blessed in this area

Y'all.....kids are sick again, we have what seems like a neverending to do list .....but I took some time to get some things done this week that my future self will thank me for! Got some mixed fruit jars canned up, I try to do this when fruit goes on sale. This time of year I stock up on my canned pineapple since it goes on sale for much cheaper than you can buy canned pineapple for. You can use the rind to make some yummy tepache (which is also a great probiotic beverage for sickness gut health and great for when you're sick to give you a boost) and I always freeze the cores to use in our smoothies....not one piece of it goes to waste! I will probably make another trip out over the weekend for more pineapple so I can make sure we have enough for the whole year since generally pineapple only goes on sale this time of year. Also made another batch of Italian penicillin soup for dinner tonight since we've got sickos.... I'm so ready for the sun to come out and give us a big old boost of vitamin D! Oh and yes that is me reusing store bought jars. They work great, been doing it for years.

So blessed to have children who want to help me make dinner. Children who want to spend time with me, it would be SO much easier to do it by myself, but then what is the point of that?

They are making chicken Alfredo from scratch with local cream, grass fed butter, leftover chicken and some protein pasta from Italy (Italian wheat my daughter can actually have without reacting like she does with our wheat)

Y'all, the journey we've been on with these birds! 😂 This is one of our beautiful specialty meat birds. They are going to butcher tomorrow morning and we'll have packages of all cuts of chicken in about 2 weeks. Feel free to reach out if you're interested in locally grown pasture raised chicken. They are fed a ration of grain from a local mill along with holistically cared for. We give them organic apple cider vinegar and local raw honey in their water to keep them healthy and free of illness and they have grown beautifully

Bunch of sickies in the house so we've been focusing on healing foods, so of course we had to have Italian penicillin soup with some homemade fresh milled sourdough bread toast.

This soup is so good! Very tasty and very nourishing when you're sick. Just make sure you use homemade bone broth to add lots of protein and minerals

Such a weird December! We are wearing T-shirts and sweating doing chores after Christmas! We are grateful for a few days of warmth before it gets super cold next week..... definitely makes farm chores nicer.

Caught this picture of these guys playing together when I got home from running errands. So grateful my babies get to grow up like this!

Haven't posted in a while, thought I'd update y'all on these cute little raptors! Something to note is chickens are omnivores and LOVE when they are able to get their breaks on extra protein. Currently they are devouring a pig head from a pig we got butchered. Nothing goes to waste here, our dogs will get the feet from the pig and we get the rest! We will render down the fat to make lard for cooking.

These birds will go to butcher next month and we'll take a little break for the rest of winter to avoid more casualties because of weather.... It will also allow us to prepare some other things around the farm for spring.

We are excited to see how these guys turn out. They are kosher kings and supposed to have superior meat flavor, they do take a little longer to grow out compared to a Cornish cross, but they are much closer to the way God created bird to grow so we are happy to take the extra time and have a healthier and stronger bird to offer y'all
