Don’t boil your meat. A cold flat top can turn a good cheesesteak into a bad experience fast.

When the grill isn’t hot enough, the steak doesn’t sear. It releases moisture instead of locking it in. For a better Philly steak:

1. Keep the cooking surface at 350° or higher
2. Sear both sides before chopping
3. Move steak to the hottest part of the grill
4. Mix in the cheese
5. Toast roll (optional)
6. Fill the roll, serve it hot
