Hey, friends!

We are taking a break from the livestock side of homesteading for the foreseeable future, which means we have a bunch of critters looking for new barns. If you know of anyone looking to start a homestead with high quality animals, this would be a GREAT starter pack!

Okay. I'm back from Virginia and super motivated to get these girls moved to their new farm--who wants 'em??

Marge is a 2nd freshener Toggenburg, currently nursing her Alpine/Togg buckling born the beginning of April. She's been disbudded and was registerable, but we didn't bother. She has a nice udder, but with smaller teats than I like to milk by hand (though Kaden milks her by hand every day with no problem). She has nice stand manners and is producing about a quart once a day for us while kid sharing.

Joan is also a Toggenburg (was registerable also), in an extended lactation. She's currently producing about a quart once a day. She was a first freshener last spring with a huge single buckling and was producing nearly a gallon a day at peak lactation. She was cycling regularly through the fall, but I failed to get her to a buck in time because life got too crazy. She has a gorgeous first freshener udder and milks by hand beautifully.

The girls got copper boluses last month (these pictures were taken right after), have a general mineral available, and get just a little bit of grain on the stand. They stay fat on air, and I have never wormed them with anything other than herbs, and only when absolutely necessary.

✋️0️⃣0️⃣ for the pair. They can come with two portable, pulsating milk machines for an extra benjamin.

Friends, I'm going back to work (in addition to full-time school), so we're scaling back our homestead a bit. That means the goats are moving on.

I visited my favorite little farmstand today, , and came home with a HUGE bunch of cilantro and a mission to figure out how to preserve it.

This is it.

A cilantro lime...pesto? chimichurri? of sorts, mixed into sour cream to make cilantro lime crema.

So, so yummy.

2 bunches of cilantro
1 small onion, peeled and quartered
1 head of garlic, peeled
2-3 jalapeños
Zest of 2 limes
Somewhere in the neighborhood of 1/2-1 cup lime juice
1/2 c avocado oil
Salt
Honey (raw and local, if you can)

Blend until smooth. At this point, it's ready for the freezer. I put mine in cubes so I can thaw only the amount I need at one time.

When you need crema, thaw a few cubes and mix it into sour cream. I didn't measure this, except with my heart. Just keep tasting until it's right.

We ate it on street tacos for supper tonight, which was a huge hit, but it would be delicious on any Mexican-inspired dish. I think tomorrow we'll eat it on steak strips like chimichurri.

Cole has been working on his barnyard cross for several years now. He carefully selects the fastest growing birds with the highest production to be his brood stock. They lay rainbow colors (white, cream, blue, green, olive, speckles, and browns of all shades) and are good, hearty birds.

I don't know about you, but I don't have a pot big enough to boil 4 dozen eggs in a single layer, nor do I have time to make 4 batches of hard-boiled eggs.

Enter the oven.

Seriously. So easy.

Preheat the oven to 325F. Wet an old towel and place it on a sheet pan. Lay eggs on pan in a single layer. Bake for 25 minutes. Remove from oven and transfer to ice bath.

Done. That's it. 4 dozen eggs in 25 minutes.

Tender, cooked just hard, with no ugly ring.

If you want them softer, just shorten the bake time. So, so easy.

Y'all, if you've sent us a message or commented on a post in the last 2 weeks and haven't received a response yet, I'm really sorry. Caleb and I have been pretty ill, and between caring for him and being down myself, I'm running way behind.

Today is catch up day. I will do my best to find and reply to everyone I missed, but if you still don't hear from me, please feel free to message me!

A few things:

Kaden and Cole processed some rabbits for us last Thursday and saved 3 pelts to sell. They're raw, rolled skin-side out, and in the freezer. One tri-color, one broken chestnut, and one black. They're asking $15 for all three.

Cole's chicks are still available, with new ones hatching very soon.

Tomatoes will be listed today, some $2 each and some $1 each because they're still very much babies (but they'll take off like crazy once they're in the ground with more space--the weather is PERFECT for tomatoes).

Caleb has 2 meat rabbit starter trios available. All right about 5 months old. 2 does and one buck per set. Nice conformation, full loins. Pictures forthcoming, but likely not posed.

We *might* be at the Harrison market this weekend with the boys' tomato plants and some of their handicrafts (and maybe also some bread and treats). I will keep you posted.

Cole has babies ready!

23 barnyard cross available, 2 or 3 with feathered feet (likely out of his light brahma hen)

He's worked hard to keep high production and heavier-bodied (dual purpose) genetics and still have a variety of egg colors. Many of these hatched from green, blue, and rich brown eggs.

$5 each until Monday 4/21, then up $1 each week.

Cole has 7 of these funny little silkie crosses, hatched the beginning of February. Because of the silkie genetics, it can be hard to tell males and females apart still at this age, so they'll be sold straight run (though our best guess is that many, if not all, are pullets). They should be better egg producers than straight silkies, with the broody tendencies of the silkie breed.

He's asking $10 each or $50 for all 7.
