I first came across my family’s salsa at the age of six. I know that might sound a bit young for most people but my house was always one which took Mexican food and spices very seriously. I can still remember clearly the mouth-watering aroma of my grandmother’s cooking whenever she made her salsa. The origin of the recipe has been lost in the mists of time but it must go back more than 100 years and span at least four generations. Her process took a full day—a tradition that we would never think of changing. Just thinking about that first spoonful kept everyone hanging around in the kitchen until grandma would run us off! As I got older, my mother took over the salsa preparation—but only after she had received full approval from grandma that she knew exactly what she was doing. It took me several years before my mother started showing me the finer points of salsa preparation. I got to make my first kettle of salsa at the age of nineteen. With few exceptions, I haven’t stopped since then. I can promise you this: As long as there are people who appreciate the care I take in making it and the natural and home-grown ingredients that make it so delectable, there will always be Dos Chiles.
