Thank you customers for your chickpeas curry orders and love yesterday. It was a delight to cook this family special once again and share with the local community here.

It often feels like a dream- cooking traditional Indian home dishes (which I saw my mum cook as a kid in India) now in Vietnam and finding spirited patrons from different ethnicities tasting what was our staple weekend special treat :)

The dish's actual country name is 'Amritsari Chole'. Chole aka Chickpeas.

3 Interesting Trivia about Amritsari Chole

1. The "Amritsar" in Amritsari Chole refers to the city of Amritsar in Punjab, India.This city is considered the spiritual center of Sikhism and is home to the Golden Temple, one of the most sacred places for Sikhs.

2. The unique flavor of Amritsari Chole comes from a special blend of 10+ spices called "chole masala". This masala typically includes a unique combination of coriander, cumin, cloves, cardamom, cinnamon, dry mango, ginger, black pepper, fenugreek leaves and nutmeg. The exact proportions of each spice vary depending on the cook, but the resulting flavor is warm, aromatic and tangy spicy punch.

3. Amritsari Chole is traditionally also served with bhatura, a fluffy fried bread. The combination of the spicy chole and the soft bhatura is a popular street food in India and is often enjoyed as a breakfast or lunch dish.
