Easy Spicy Salmon Sushi Stacks

Another case of a lot of bad reviews on her website! I really didn’t think this was bad. It turned out how I expected. The only thing I did different was I used ground ginger because it’s what I had on hand. I probably wouldn’t make it again — but would probably give it 4 stars! ⭐️

Also, I’m not loving salmon lately. I think my taste is changing 😆

Also, still missing my dinner daylight.

One Pot Mustard Chicken and Orzo

If you missed it, I shared in my stories earlier that there were a ton of bad reviews on this recipe. After I read it over, I didn’t think there was any way it could be that bad.

And it wasn’t. It was really delicious and even got 9/10 stars from the hubby. I will be completely honest — I did not add fennel. I am NOT a fennel fan over here. But, this was so good. A lot of the reviews said it was too mushy or soupy, but mine turned out just perfect. I tend to over pour my orzo a tad bit because we always want more pasta, but it isn’t by much. All other measurements were the same and this was 👌

Sorry but you bad reviewers are wrong. I know my HBH.

Peruvian Chicken with Creamy Green Sauce

I couldn’t find Without Me by Eminem to play during this photo. But that’s what I was singing in my head as I was lighting up the kitchen again tonight.

This one was 👏 so 👏 good. Would 100% make again. Recipe was perfection.

Dump + Bake Chicken Alfredo Noodle Casserole

*sigh* RIP natural lighting

This was great. I was a little short on noodles so I didn’t put quite a pound, full transparency. Yes there were some hard noodles on top that weren’t as pleasant, but push them aside and enjoy the rest y’all. The reviews on this one were brutal. Overall it was super easy and yummy.

30 Minute Indian Chicken Sweet Potato Curry

This was super good! I honestly wasn’t in love with the sweet potato, but it’s just my preference, it was technically good! 😆 It was also very easy. Spoiler alert - I thickened the sauce up some.

One Skillet Tuscan Chicken and Orzo

I’m gonna call this the Italians take on jambalaya 💁🏼‍♀️ It was really good! I’m not a huge fan of sun dried tomatoes and usually all the “Tuscan” recipes have them, but this one did not! I’d totally make again, mainly because it was a one skillet meal.

Sheet Pan Oregano Chicken with Herby Citrus Sauce

This one was 💯 amazing! Could 100% go into a rotation. It came from the Half Baked Harvest Quick and Cozy cookbook! It is honestly perfect going to spring and summer. LOVE!

One Pot Spiced Chicken & Dumplings

It’s been a minute. This one wasn’t my absolute favorite, but it was good! I like a traditional chicken and dumplings and this one threw in some flair with poblano peppers and salsa verde. Not sure if I would make it again, but very glad that it turned out good!

Cheeseburger Pasta

My thoughts ⬇️

I felt silly for photographing this one because I don’t have fancy skills and it looks more like Hamburger Helper 🤣 However, it was great! I really like the hints of pickle you get throughout. I didn’t use the full amount of pasta because I felt like I didn’t have quite enough liquid. Not sure if we would make this one again, but not bad at all!

Garlic Parmesan Salisbury Steak

My thoughts ⬇️

It was good enough that I forgot to take a picture 😂 It was a very beige meal though, as expected. We honestly thought that 1 cup of wine was quite a bit, you don’t NEED that much in our opinion, but this was delicious! I whipped up some homemade mashed potatoes to go alongside it. Don’t forget bread to sop up that sauce…

I liked this one more than the Cajun skewers from the other day!
