2 weeks ago we went to San Antonio with just us as a two-person team, which had me feeling nervous about how we'd keep up, trying to manage 3 stations, front, noodle pulling, and plating, with just the two of us, but it was super surprising that we kept around a 25 bowls per hour pace, selling out both Saturday and Sunday, surpassing the previous 2-man squad record of 143 bowls in a service with a new record of 160! 😮

It's crazy how much busier it feels when you're down a person but trust me, it wasn't a decision by design 😂 it was a grind, we were exhausted in the end, but it was fun seeing everyone stop by, sometimes even more than once in the same day! 😂

Now we head to Dallas for another 2-person run 😅 at Otaku Food Festival this weekend!

PS - Every time we come to San Antonio for this kind of event, we leave thinking y'all are wild with the support and it's truly amazing 🙏

September is about to be crazy these 2 weeks of festivals in the DFW and HTX!

For these festivals in addition to the spicy sichuan biang biang noodles we are going to be serving up scallion biang biang noodles for those who want the noods but prefer a savory, aromatic flavor profile over the spice and tingles 🔥

Finally got some photos of another one of the rotating specials - this is the spicy chicken curry biang biang noodles!

There are curry noodles in many Asian cuisines, but I thought why not make curry noodles but with one of my favorite cuisines for the curry 🇮🇳

Biang biang noodles with their chewy, bouncy texture are the perfect vehicle for strong flavors and thick sauces or gravies, so this just made so much sense to me! And in the 5 years I've been making this, I know that this makes a lot of sense to many of yall who've tried it as well! 😉

We are BACK in the Heights at New Magnolia Brewing this Saturday and we're bringing a special of the day - spicy chicken curry biang biang noodles! 🌶🍜

Once mid September hits, we're going to have to take a break from pop-ups or slow down drastically as the festival season starts back up for us and it is currently looking a bit WILD 🙃

What a swing from one week to the next, exact same location, we might have even been set up in the exact same tent spot 😮, just a different event, and whereas last week we nearly sold out for two days in a row, this week's event was actually our poorest event of the year so far, even including our popups.

After factoring in expenses for the travel to and from San Antonio, the accommodations, the vendor fee, and labor costs, the net was just about $70 😅

After all of the effort and time put into preparing all of the ingredients for the event, the time spent driving, sitting our out in the heat, sweating our booties off, for so little return - this is one of those times that just really leaves you feeling a little burnt out.

But the ups and downs are just what comes with the territory, and regardless of what happened on this day, we still had to drive right back to Houston the very next morning for our pop up at New Magnolia Brewing (which turned out amazing thanks to y'all ☺️)

Well, I just wanted to peel back the curtain a little bit for you guys and let you guys know that it's not always sunshine and rainbows doing this 😅

At least we've got sick TeaGu Café uniforms and matching aprons now 🤷‍♂️😂

At festivals when my main role is to stay pulling noodles so we don't fall behind and my team is doing the plating, everytime the sauce hits the fresh, steaming hot noods, I get a wave of that aroma and I'm thinking geez louise that smells SO good! ARGH 😩
