A huge thank you goes out to all of our staff involved in this years Emerald Ridge Elementary School year end picnic. Our bakery, deli and produce departments all worked together as one team Friday morning creating more than 450 lunches consisting of Ham or Roast beef sandwiches, cheese buns, carrots and dip and some delicious watermelon slices for the amazing group of students at ERES.
A HUGE thank you to all the staff and parent volunteers for organizing this great lunch for your students and children!
Thanks again and we hope each and every student enjoyed their special lunch this year.
We had a blast getting our store ready for the 2024 Summer show and sell. Our team did a flawless job executing our plan and bringing summer to life throughout our store in each and every department. I can’t help but be so proud of the team we have at Emerald Park IGA.
It was something special seeing each and every employee and department collaborate together as truly one team!

Pizza Baked Chicken
IF you want an easy low-carb recipe, try this! Chicken topped with all of your favorite pizza toppings and of course some fresh mozzarella cheese! You can play around with the recipe and add all of your favorite veggies and/or meats.
Recipe:
3 chicken breasts pounded thin
1/2 cup marinara sauce
3 tomato slices
3 tsp oregano
2 tsp sea salt
1 tsp black pepper
pepperoni, mushrooms, black olives, fresh basil
4 oz fresh mozzarella cheese
Instructions:
Preheat oven to 350 degrees F.
In an oval baking dish add the chicken breast. Season with salt, pepper and oregano. Be sure to flip and season both sides!
Add 2 tablespoons marinara sauce on each piece of chicken. Now here comes the fun part, you can really top this with all of your favorite pizza toppings.
Bake in the oven for 40-45 minutes. Note: if you want your chicken to cook faster, be sure to pound thinner (or slice down the middle). The thicker the chicken, the longer it'll take to cook
