🗺️ Lorenzo's Journey 🌍

Born and raised in Florence, Lorenzo's love for nature has always been evident. He seizes every opportunity to escape the city and immerse himself in the beauty of the outdoors, even giving names to the trees he encounters. From a young age, he was involved in a small olive oil production with his family, where he absorbed anecdotes and wisdom from seasoned farmers. Embracing his wanderlust, Lorenzo enjoys traveling, exploring new cultures, and sharing the taste of Tuscany with the world through a bottle of UNTO EVOO.

🧰 Process, Process, Process! ⚒️

Lorenzo's engineering background has instilled in him a deep sense of curiosity and enthusiasm for processes. This keen interest manifests in his dedication to refining every step of UNTO’s production. You might find him one day in the fields, working alongside his cousin Filippo to re-plant ancient olive trees. The next day, he could be at the mill, engaging in conversations with fellow farmers and mill technicians to optimise production methods. And who knows? On another day, he might be halfway across the globe, savouring the taste of a precious monocultivar EVOO.

💦 The use of water and other resources in olive farming is something that differentiates industrial and traditional processes. In big industry olive oil production, the trees are “pampered”. Given water, nutrients and, in many cases, preventative pesticides, to ensure high volume yield across the board, every year.

👨‍🌾 In contrast, olive farming using traditional methods is a much more personal process that is fundamentally in tune with the land. The farmer knows each of his trees and watches them for what they need. In Tuscany, the blistering hot summer is becoming more and more of a problem. Olive trees thrive under a little bit of stress, it helps to produce the polyphenols which we know and love in high quality oils. But too much and you will produce an inedible oil!

So, a careful dance with nature begins. Water is given only when it is vitally needed, chalk is used as a natural “sunblock”, and organic pesticides are only introduced to trees in reaction to infestation, not as a preventative measure.

These are the processes that create balance with nature and a respect for each tree. And ultimately help to create an Organic Extra Virgin oil that is of the very best quality.

🌿 Guido's Deep Roots: 🌳
Guido grew up in close contact with nature and developed his appetite for organic agriculture early on, learning from centuries of Tuscan tradition. Despite all the naysayers, he knew that his calling lay in farming and so he decided to follow his dream achieving a bachelor in Agriculture and a Masters in Ecology. Guido's deep understanding of organic farming practices and his commitment to preserving our planet's natural resources make him invaluable to the UNTO team.

💚 Green Innovator: 🌍
Guido's innovative spirit is a constant source of inspiration, and a key ingredient for producing a truly unique product. He constantly seeks new ways to integrate new technology and update our production processes, pushing the boundaries of sustainable farming with the ultimate goal or raising awareness of what our beautiful land is capable of. It wasn’t easy but step by step, he restored 6 hectares of olive groves that, since 2017, have been producing incredibly tasty award winning extra virgin olive oil.
We are sure of one thing: as long as there are still pockets of abandoned land, Guido will not cease his efforts, tirelessly restoring them. It is a testament to the thousands of hands that have built our civilization with calluses, patience, and a profound ability to create beauty and harmony.

We are delighted to have won Platinum in both the “Label” and “Total Image” categories at the ‼️

Our vision when we were creating UNTO was to communicate a bold brand with serious ambition and a unique product, but in a human and light way. Thanks to our friends this was realised in their award-winning brand design, which brought UNTO to life. 👀

If you’re new here, let us introduce ourselves. 👀

UNTO was started as a rural recovery project with the goal to bring life back to neglected pockets of Tuscan land.

These fertile lands sustained rich agriculture for centuries, but fell into abandonment following rural depopulation since the 50’s. It is in this setting that our independent farming community was born. Producing a range of superior quality olive oils is the first step on our journey to restore and revive the lands and our heritage.

Slowly, we are establishing a rich and diverse movement of rejuvenation in the centenary tradition of Tuscan agriculture, creating an equilibrium between tradition and innovation, nature and man-made beauty.

Help us restore this land, one bottle at a time.

During pruning we can fully immerse ourselves in the beauty of our territory, undisturbed by tractors and noisy machinery. It allows us to tend to each plant one by one, examining their hidden aspects, and getting to know them closely.
The feeling of recognising all our trees is a unique, nurturing sensation, making us experience our plants as members of an exciting (though rather quiet) big family.

To us it means a lot, as every year it allows us to understand the consequences of the previous year’s work.
