Lent week 2! Shrimp scampi with linguine. Sauté garlic, chopped tomato, shrimp in olive oil. Add cooked pasta and pasta water to make the sauce. Squeeze of lemon juice and fresh parsley. So good 🍤 🍝

Pasta with prosciutto sauce. Plain tomato sauce cooked with green onions and sliced prosciutto to give it a smoky flavor. Add the cooked pasta right from the pasta pot and add 1/2-3/4 cup of pasta water to help the sauce stick to the noodles. Yummy lemon vinaigrette for the salad and bread round out the meal 🍝

Arroz con pollo, a little personal additions! Air fried the thighs seasoned with cumin, coriander, salt, paprika, onion and garlic. Rice had similar spices with diced red and green peppers, fresh onion and garlic, cooked in chicken broth and some tomato paste. Finished with lime juice and cilantro. Very yummy. Let me know if you need the recipe. 🇲🇽 🐓

Creamy lemon and burrata sauce with peas and fresh ground black pepper over spaghetti. A little lemon zest took it over the top! Fun foodie night without the hubby who doesn’t like peas !🥂

Here’s the recipe:
8 ounces favorite pasta
1/2 cup diced onion
1-2 cloves minced garlic
1 tablespoon of olive oil
1 cup green peas (I used canned; if frozen cook according to its directions then use in recipe)
1 - 4 ounce burrata, cut into 4-6 pieces
1 tablespoon lemon juice
1 teaspoon lemon zest (optional)
Crushed black pepper
Salt to taste
Fresh basil leaves (optional)
1 tablespoon finely grated Parmesan cheese

Cook pasta according to directions for al dente. While pasta is cooking, sauté onions and garlic with olive oil in a large pan big enough to fit the pasta on medium heat. When starting to brown add the peas then reduce heat to heat them up. Can add salt and pepper now. Once pasta is ready reserve 1/2 cup pasta water then drain the pasta (or just add it right to the pan carefully with tongs). Stir the pasta and sauce, adding 1-2 tablespoons of the pasta water to the pan to thicken the sauce. Once pasta is coated, add the lemon juice and zest and stir, then add the burrata on top and cover over low heat for 3-4 minutes to allow the cheese to warm up. Then remove cover and stir to coat the pasta with the cream. Remivr from heat. Plate the pasta and grind black pepper over the pasta then add basil on top and Parmesan cheese.

Lamb with chimichurri sauce, roasted potatoes, broccolini with shallots, garlic and chile garlic sauce. Farewell dinner for my son going to London for the semester so made his favorites.
