I just ended a 3 day fast with Salmon. What?!?! Me?! Seriously, not a fan unless there are lox and bagels covered in capers and cream cheese in the same bite. ANYtime my wife made salmon, I went for my go-to ribeye. I still couldn't wrap my head around GiGi and her love for this. It seemed unnatural, but that's just how I felt about the fish. Boy, was ai foolishly wrong!
Backstory: The old Greg has been lost in an ugly battle with comfort food these last several months. Remember the Messy Middle last May? Seems to be a habit. I was telling yesterday it's now the messy meatloaf 🤣.
After a busy spring and summer, with almost no attention to my well-being, I was headed for a bad ending. Last time anyone saw me in Austin I was around 195. Monday when my plane touched down in Orlando from Dallas, the gloves came off. All it took was seeing a pic of me sitting on the splashpad ground with my grandson to get very upset with what I've done. 224. That is absolutely NO way to be. And when I am in Dixon for Low Carb For Better Health on Sept 12, you can bet I will be a far cry from 224, albeit with fishbreath.🐟
The journey has begun with a 3 day fast, and I owe you an apology for not making this sooner and speaking to the ease! OH.MY.GOSH. It was so simple I still can't wrap my head around it. Salt, pepper, a dash of Tajin and garlic powder, brushed with EVOO. In 11 minutes, I had one of the best tasting salmon meals of my LIFE. I'm not even kidding. Plugged in the temp probe, pressed "fish>salmon>medium" and it did the rest.
Is it a feeling that I could consume shoe leather after 72hrs of no food? Is it the memory of sardines last year? I guess it doesn't matter. I'm so glad for this discovery, and I inhaled the fish. And you know what? I'll probably have this at least 2x/wk, maybe more. No sides tonight; just 6oz of salmon.
Bring on your favorite recipes for salmon please! I can't wait to taste what else is in store!
