Phad Phet Long Beans with Ground Beef & Red Curry Paste
Serves: 4

Ingredients:
½ can coconut milk
½ small red onion, sliced
½ small yellow (cooking) onion, sliced
2 tbsp red curry paste
2 tbsp kra chai (fingerroot), crushed and sliced into ½-inch pieces
150 g ground beef
3 cups long beans, cut into 1-inch pieces
1 can sliced bamboo shoots, boiled for 4–5 minutes and drained
1½ blocks palm sugar, crushed (about 3 tbsp)
3 tbsp Thai fish sauce
½ cup water
2 tbsp kaffir lime leaves, finely sliced

Cooking Method:
Heat a pan over medium heat. Add the coconut milk and stir until slightly thickened.
Add the sliced red onion and cooking onion. Stir until fragrant, then add the red curry paste. Mix well until the curry paste is fully incorporated into the coconut milk.
Add the kra chai and ground beef. Stir well, cover, and cook for about 1 minute until the beef is just cooked.
Add the long beans, bamboo shoots, and palm sugar. Stir until well combined. Cover and cook for another 1½–2 minutes. Do not overcook—the long beans should remain crisp, not soft.
Add the fish sauce, water, and kaffir lime leaves. Stir well and remove from heat.

This dish is led by the sweetness of palm sugar, balanced with the spiciness of red curry paste, the savory richness of ground beef, a touch of saltiness from fish sauce, and the fresh aroma of kaffir lime leaves.
