Go-go-Governo! Totes extra Tuscan red. Like Chianti with lip fillers.

‘Apassimento’ wines are having a bit of a moment - - and ‘Governo’ is another word for this. The short version = pick some red grapes, make wine from most of them. Leave the others out to dry for a bit so they’re rich, flavoursome, and raisin-y. Add them to your partly made wine. 💥 Boom -> oh so drinkable, juicy, velvety reds with maybe just a little hint of sweetness.

Delicious, often dangerously smashable, tastes pretty good with most things - preferably good chat. Would be banging with a smokey habenero-loaded chilli, maybe one made with dark chocolate. Enough to make you want winter to last at least six months longer.
