Do you have your appetizer yet....?

11 days to Christmas, time to get in gear and get your menu sorted..

1st we have salmon belly canapés. Crispy pan fried Salmon belly, sautéed apple slices, drizzled with an orange reduction all on pan toasted slices with Boursin cheese.

These were a hit when we served them. It will have your guests drooling for the entrée

Easy, beautiful, delicious Lemon Posset....

Three ingredients, one stunning dessert for your Christmas dinner?

• 600 ml heavy cream (2.5 cups)
• 90 ml Lemon juice ( 1/3 cup)
• 200g sugar (≈ 1 cup)
• zest of three lemons

- in a pot add all your sugar and cream. Bring to a simmer
- once simmered, simmered until sugar is dissolved.turn off the heat and take off the heat
- Whisk in the Lemon juice and zest. Let is cool slightly. About 10 min
- Pass through sieve to remove the zest and divide into your serving containers. Then let cool to room temp, chill in the fridge after cooling to allow full setting at least 4 hours to 24 hours.
- To serve to can leave it plain or decorate it like I did. I used cookie crumble, Lemon Curd, cookies and fresh fruits.

A light delicious end to your dinner. Your guests will be gobsmacked by how good it is!! Happy Thursday!

Spicy yogurt. The spicy,creamy,sweetness of it all will transform your chicken and waffles and teleport your tastebuds to new worlds.

Spicy Yogurt sauce:
1 cup Greek Yogurt
3 Tbsp honey or maple syrup
2 Tsp Cayenne Flakes
Salt to taste
Juice of 1 small lemon
1 Tsp Srirracha ( adjust to your heat preference)

Mix and drizzle all over dem chicken thighs.

This is a game changer you will want to save it.

Add Ras el Hanout to your spice rack. You will not regret it! It will add a taste of Morocco 🇲🇦 to your plate.

Used Ras el Hanout to season the steak for a whole new experience. Changed up the mash by frying it instead of simply mashing. Seasoned and added boursin to it. CRISPY on the outside, soft, creamy on the inside. Tongue bitting!!

TARTS OF COURSE!!!!

With a creamy, rich lemon curd and a delectable salted caramel nestled in a light, airy pâte sablee finished off with a spiced whipped cream gel. Oooo mama!! ❤️ ❤️ ❤️ the combination was something.

Molten chocolate cake is a classic! If you want to knock socks off it's definitely one to master.

You can play with the fillings if you go with the frozen ganache center instead of underbaking.

Whomever you make these for will be floored!!! Best of all it come together in under 30 min!!

That's right!! No, No hear me out.

Cooked right, these little buggers are delicious!

Growing up the gizzard was one of my absolute favorites. So mixing it with pasta was a no Brainer for me.

Also they are packed full of nutrients and cheap!!

To cook them I just boil them in salt water to season them. Then I fried them up and seasoned them with lemon followed by making a sauce and tossed in my pasta oooo mama!! Good thing I bought a bunch them cuz these bring back memories!!

You gotta have one!

In my opinion everyone should have a go to marinade. For me?

Cilantro or Parsley 2 C.
Ginger ( 14g)
Garlic (4 cloves)
Dijon mustard (2Tbsp)
Honey (1 Tbsp)
Olive oil (1/4 cup)
Salt to taste.

The beauty is with marinade I just play around with the ratios till I get a taste I like so no marinade is ever the same.

You could add chilipeppers for heat or soy sauce and reduce salt. whatever you want!! That's the beauty of cooking gotta have fun with it!!!! Don't stress!!

Hadbsome left overs to get rid of so pineapple fried rice it was!

Pineapple+peppers+ginger+garlic+chicken+eggs+ rice = taste bud heaven!!

Hit it with some charged lemon and herb oil ooooo weee!!!

Fried rice has got to be one of the ultimate Fridge cleaners in my opinion. The beauty of it all is you just look in your Fridge and if you got day old rice.... GET FRYING!!!

SEARED GOODNESS, aka Maillard Reactioned heaven!

What we got here is a reverse seared steak and then tofu as well because why not!!!

The steaked was basted with fresh ginger and garlic mmm mmmm. For my plant based amigos subbed in Tofu and boom cloud 9 as well!

To finish it all all paired it with crispy potatoes baked using drippings for extra flavour, Brussel sprouts then drizzled a homemade lemon tahini finishing sauce ooooo mama!! Definitely going to be doing this again. If you would rather not make your own sauce get some lemon tahini that will work wonderfully as well!!

The dipping sauce is avocado,cilantro,maple,bit of garlic

Comes together quickly and easily in the oven. NO FUSS!

Take that can of tuna and surve it with a delicious crispy brown rice!! Got the inspiration to do this after reading about Korean scorched rice.

Mmmm mmm the whole dish come together in 30 min tops.

The tuna was mixed in a spicy,sweet maple sauce and scallions. Topped it all off with an egg white scramble cuz I decided to use the yolks for a quick hollandaise sauce!!! Ooooweeeee!!!

Confit is actually a way to preserve. So I Mae confit chicken and tomatoes. The tomato confit was used to make a sauce for the pasta and the chicken was crisped and shredded to add to the pasta and salad!! Yum! Yummy!

When cooking, one thing you absolutely need to ensure before your start is sharp knives!! To get nice clean cuts your knives must be sharp. This will also actually help keep you from cutting your self ( dull knives are more likely to cut you).

Without a properly kept knife there is only so much you can do. Texture, cook time, appeal, and flavour can all be affected by the knife. Take care of your knife and it will take care of you.

My wife made this cauliflower stew the other. Damn!! It was so good I had to ask her to make a second batch. The flavours are AMAZING!! I am going to have her make it again and watch every single step! Or maybe just enjoy the goodness stuff my face. We will see!!!

ONE DOWN!!! MORE TO COME? This one was all done for $84.30 CAD!! Serving 4 adults. Including drinks!

I had the pleasure the of cooking for and her family for her birthday. Gotta say it was a blast! Being the first dinner party i have ever cooked for, thank you! for allowing me to help celebrate your special day!

What did we have? Course 1: Pear and Bruschetta as an appetizer. This was followed by spinach ricotta stuffed pasta shells and for the main we had a lemon cilantro chicken on rice with radicchio and an orange pan sauce (love them pan sauces so easy yet so Good!). And to finish it off personal cakes with a cream cheese frosting with an orange reduction season using dessert rose spice! Love it when a plan comes together.

Meat free, dairy free,animal free!! What's your favorite plant based meal? One of mine ⏫

Some days the mood just hits to enjoy deicious all plant meals.When the mood hit this time I also really wanted meatballs! So with that, lentil quinoa meatballs with a spicy Thai coconut mango curry. Might be winter and cold but those flavors transport you right back to summer while warning you all up inside.

Used a Thai Mango curry base cuz sometimes you are lazy and don't want to do it al from scratch, added is a few of my own spices and coconut milk to give it an extra richness. Served it all up with rice. Best of all??? Cost wise ain't breaking no bank!!
