We made 30kg bacon on Saturday last week but I guess it's just too good, because it's sold out already. Next batch will be ready in 2 weeks because we do things the old fashioned way(the only way)

Experimenting with salt brined chicken breasts and some beef bacon.

Chicken was brined overnight and will be smoked to 64 degrees internal, it will be fully pasteurised and ready to eat straight out the smoker

Beef bacon was dry equilibrium cured for 10 days and then dried for 2 days, it will be smoked to 71 degrees internal and also be fully cooked and ready to eat.

Bacon done curing, next step drying, and then In to the smoker for 8 hours
