It is beet season and time to make some kvass

This tangy, digestion-supporting, nutrient-rich ginger beet kvass is one of the easiest ferments you can make, and you don't need a starter or any special equipment. ⁣

Why I make it: ⁣

⭐ Beets are a good source of folate, vitamin C, potassium, magnesium, iron, manganese and phytonutrients such as betains, which have been shown to provide antioxidant, immune and detoxification support.⁣

⭐ Cooking veggies reduces vitamin C content, but fermenting them preserves vitamin C and is thought to actually increase bioavailability⁣

⭐ The beneficial bacteria further improve the nutrient profile by producing B-vitamins⁣

While eating supper tonight, and the Dutchman was remarking how good the sammich was we were discussing how Sunday supper came to be. The grand Coronation of King Charles is coming up next Saturday, May 5th and I saw a post from Bosh about quiche in honour of that occasion. So I was telling the Dutchman, that I think I will try making some quiche tartlets in the very near future. I do think I recall something about Charles not liking quiche, but then that does not mean that we cannot try them Right???? ☺️

Now this is a good thing to keep in mind if you are baking from scratch, when we rely on the manufacturer of boxed foods to do the chemistry that it takes to make a good cookie or cake, it leaves us out of the true creativity of cooking and baking.

Baking soda and baking powder are both leaveners, but baking soda requires an acid to activate, and baking powder already contains that acid.

Ingredients
1/4 cup Canola Oil or avocado oil
6 tablespoons Almond Milk
1/2 cup Unsweetened Apple Sauce or mashed banana
2 teaspoons Vanilla Extract
1 cup Finely Chopped Apples packed in the cup
1/2 cup Coconut Sugar
1 1/2 cups All-purpose Flour sifted, note 1
1 teaspoon Ground Cinnamon
1/2 teaspoon Ginger
3 teaspoons Baking Powder
Apple Streusel
2 tablespoons Maple Syrup
1/2 cup Chopped Walnuts
1/2 cup Finely Chopped Apples
1/2 teaspoon Cinnamon
Sweet glazing
1/2 cup Powdered Sugar
1-2 tablespoons Almond milk
1/2 teaspoon Vanilla
Instructions
Preheat oven to 350°F (180°C). Line a 9-inch x 5-inch loaf pan with oiled parchment paper. Set aside.
In a large mixing bowl, add olive oil, almond milk, apple sauce, and vanilla. Whisk well to combine.
Core, peel the apples and cut them into small chunks. Set aside 1/2 cup for later in the recipe. Add 1 cup into the previous bowl and stir the apple chunk into the liquid ingredients.
Add the coconut sugar, cinnamon, ginger, baking powder, and sifted flour to the wet ingredients. Stir gently to incorporate all the ingredients together until just combined, but DON'T overmix, or the bread will be gummy and thick.
Transfer to the prepared loaf pan and start preparing the apple streusel bread topping.
Apple streusel topping
In a small bowl, bring all the topping ingredients together and use your fingers to rub maple syrup and other ingredients together to coat evenly. Crumble all over the bread.
Bake for 50-70 minutes or until a skewer inserted in the center of the bread comes out clean. You can cover the top of the pan with a piece of foil to prevent the top of the bread from browning too fast.
Cool in the pan for 5 minutes, then pull out the bread from the pan using the hanging pieces of parchment paper.
Transfer onto a cooling rack to completely cool - about 2 hours.
Drizzle a mix of icing sugar, almond milk, and vanilla on the cooled apple bread for an extra sweet glaze.
Storage
Store in an airtight cake box in the fridge for up to 4 days or freeze and thaw at room temperature the day before.
Notes
Recipe updated on 1/10/2021, adding an apple streusel to the top of bread and reducing sugar.
Note 1: you can use white whole wheat flour for this recipe or an all-purpose gluten-free flour blend containing gum. Almond flour or coconut flour, or oat flour doesn't work in this recipe.

Beans like mung beans and chickpeas are great sources of protein that are both 1) plant-based and 2) easy on the digestive system. There are also plant-based protein powders made from vegetables that are good sources of protein, like yellow peas. If you find that these foods cause gastro upset, then you may need to get your gut biome in better shape with probiotics.
