Easy Crunchy Asian Cabbage Slaw with Addictive Sesame Dressing

Ingredients:
1/2 medium head green cabbage, thinly shredded (about 4 cups / 280g)
1/4 medium head red cabbage, thinly shredded (about 2 cups / 140g)
2 large carrots, shredded (about 1.5 cups / 180g)
4-5 scallions, thinly sliced (green and white parts)
1/2 cup (30g) fresh cilantro, chopped (optional)
1/4 cup (35g) toasted sliced almonds or cashews

Mexican Street Corn White Chicken Chili
🧾 Ingredients:
4 boneless, skinless chicken breasts

1 yellow onion, chopped

1 jalapeño, diced

2 cloves garlic, minced

2 cans (15 oz) white beans, drained and rinsed

2 cups corn kernels (fresh, canned, or frozen)

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp chili powder

4 cups chicken broth

1/2 cup sour cream

1/2 cup cream cheese, softened

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices, cotija cheese, and tortilla strips (optional toppings)

Garlic Chili Roasted Okra
Ingredients:
1 pound fresh okra, washed and dried
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Trim the ends off the okra and cut them in half lengthwise.
In a bowl, combine the okra, olive oil, minced garlic, chili powder, salt, and black pepper. Toss until the okra is well coated.
Spread the okra in a single layer on the prepared baking sheet.
Roast in the preheated oven for 15-20 minutes, or until the okra is tender and slightly crispy.
Serve hot and enjoy!
Prep Time: 10 minutes | Cooking Time: 15-20 minutes | Total Time: 25-30 minutes
Servings: 4
Tips:
For extra heat, add a pinch of cayenne pepper to the seasoning mixture.
Make sure not to overcrowd the okra on the baking sheet to ensure even roasting.
