We do love pies 🥧.

Great way to use up leftover pork and Beans 🫘, I even had time to whip up some Palusami Pies too. Rowdy 3 helping in the kitchen made this a very quick dinner.

This one ticked all the boxes, Tasty, healthy ish and cheap.

Pork and Beans 🫘 done on the Oklahoma Joe's Bronco with Heat Beads lump charcoal. Homemade bbq sauce, slow cooked cannellini beans with pork hocks rubbed with Texanz pork rub made this one special. Served with crispy tortillas, slaw and still in season just sweet corn 🌽.

Leftovers for breakfast tomorrow served with a poached egg. 🤌

What’s been hitting your pits lately?

Something that’s we’ve been cooking a lot of is pork belly, we used to think of it as a luxury treat! But at $8.95kg at gilmoursnz it’s way cheaper than our local big stores price mince. Skin on and crackly, skin off (why would ya!) and smoked or with patience turned into some delicious home cured bacon. It keeps & reheats really well in the freezer vac sealed too.

We love to try any new cuts we come across and these beef tails didn’t disappoint. Trimmed up they had some great marbling so we treated it like a brisket to about 205f. It tasted amazing not as beefy as brisket but not too rich like cheek. Will definitely give these another go and maybe play around with some hot and fast to medium next time.

The legends from posted their latest Ramen and it looked so good, I had to give it a go. Armed with sheer will of I want to eat it, I made a broth out of leftover bbq meat, then cooked the chashu pork as per Google, hot n fast skirt steak over some coals just enough to add some colour, threw it in a bowl. Kids loved it. Highly recommend giving this one a go, well worth the prep worth.

⚡️KUMEŪ 2026 ⚡️

Our first comp of 2026 saw us headed to the kumeuclassiccarandhotrod along with 30+ other teams to support the longest running BBQ comp in NZ… thank you Mr Seeney 🫡

We were stoked to have Mikey stand in for Bex this weekend. Mikey is 1/2 of More Better BBQ a world class comp team with loads of knowledge & experience on the field and behind the scenes.

We had a fluid cook & I was pretty happy with our hand ins. We started out strong with a 5th place chicken & 12th place ribs but it was all down hill from there! Oh well theres plenty of time to practice between now and the next comp.

Absolutely stoked for Smoked Out West on their GC and Rum and Que on RGC starting out the season strong.

Popped instore to Gilmours Hamilton this week to pick up some supplies for the first competion of the season , as well as having everything I needed for competion including nitrile gloves and tinfoil there was some great meat specials instore.

Better late then never post for our last competition of the season we headed down to Rotorua for . We had a great cook and an awesome weekend in the sunshine 🌞.
