This super simple BBQ ribs recipe is the perfect combination of sweet and spicy! The secret ingredient? The Five Pepper Cacao Rub from our collaboration with @Selefina.Spices! With just a handful of ingredients and very little effort, you’ll have mouthwatering ribs on the table in no time.
If you’re a little unsure about using a cacao rub to season your St. Louis ribs, let us persuade you. The rich, slightly bitter notes of cacao perfectly balance the sweetness of the BBQ sauce and enhance the savory flavors of the meat. It adds depth and complexity without overpowering the dish. Ready to give it a try?

INGREDIENTS
1 SLAB - St. Louis Ribs (about 3 lbs), membrane removed
2½ TBSP - Five Pepper Cacao Rub
1½ TBSP - kosher salt
1½ TBSP - brown sugar
¼ CUP - barbecue sauce
DIRECTIONS
In a small bowl, combine the Five Pepper Cacao Rub, salt and brown sugar.
Pat the ribs dry and rub the spice mixture onto all sides of the ribs. Wrap in plastic wrap and refrigerate for at least 2 hours and up to overnight.
Preheat oven to 250°F and place the oven rack in the middle.
Discard the plastic wrap. Wrap the ribs in two layers of foil and seal tightly. Place on a rimmed baking sheet and cook for 2 hours.
Discard the foil. Place the ribs back on the pan meaty side up. Continue cooking for 1.5-2 hours or until the ribs are tender.
Turn the oven to broil. Generously brush the ribs with barbecue sauce and cook for 5 minutes or until the ribs are lightly caramelized.

INGREDIENTS FOR THE SYRUP
½ LB strawberries, sliced
1 TSP pink peppercorns, whole
½ TSP white peppercorns, whole
½ TSP black peppercorns (Vietnamese), whole
1 SPRIG fresh basil (large)
1 CUP water
¾ CUP sugar
INGREDIENTS FOR THE DRINK
1 TBSP pink peppercorns, whole
1 TBSP fleur de sel, flakes
1 CUP strawberry peppercorn syrup (above)
⅔ CUP lemon juice
1 CUP water
DIRECTIONS
Make the syrup: Combine the strawberries, peppercorns, basil, sugar, and water in a small saucepan. Bring to a simmer over high heat; turn off heat, steep for 45 minutes. Strain and refrigerate syrup to chill.
Make the salt + pepper rim: Grind peppercorns; combine with fleur de sel. Spill mixture onto small plate. Moisten rims of two glasses with a bit of water or lemon juice; dip the rims (at an angle) in the mixture. Carefully fill glasses with ice.
Make the drink: Combine the strawberry syrup, lemon juice, and water in a small pitcher; mix to combine. Pour mixture into the prepared glasses.
Garnish with strawberries, lemons, and basil leaves! Serve chilled.

Combine the butter and bittersweet chocolate in a microwave-safe bowl and melt in 30-second intervals until melted and smooth. (Alternatively, heat chocolate and butter in a double boiler until melted and smooth).
In a large bowl, combine sugar and eggs and whisk very well to combine. Then add the chile powder, cayenne, cinnamon, vanilla, and salt, and mix to combine.
Slowly add the melted chocolate mixture to the large bowl while whisking and continue to whisk until smooth. Finally, fold in the cocoa powder and flour with a rubber spatula and mix until just combined.
Pour the batter into an 8x8 baking pan lined with parchment paper. Bake at 350°F for 26-28 minutes. Sprinkle with fleur de sel, slice, and serve.
