citrus salad

1/8-1/4 small red onion, sliced thinly
2 tbsp white wine vinegar (optional read recipe)
2 blood oranges and 2 navel oranges (I just used grapefruit and orange instead)
3 cups fresh baby arugula (I used spring mix instead!)
1 tbsp evoo and lemon juice
sea salt and pepper
2 - 3 tbsp crumbled goat cheese, (or ricotta or feta)
1/4 cup flaked almonds or pistachios (I used pistachios!)
Optional: 1 tbsp fresh mint leaves, finely chopped

Put sliced onion in a small bowl with white wine vinegar. Set aside. Remove peel and pith from oranges and slice into rounds. Arrange on a plate. (Sprinkle with mint leaves.) Drain red onion, discard vinegar, rinse in water and scatter onion on citrus. Toss arugula/spring mix with evoo and lemon juice. Season with salt and pepper. Add to salad. Garnish with crumbled cheese and nuts and serve immediately.
***you don’t need to use vinegar, you can soak onions in water instead to remove the harsh/raw flavor****

Thai red curry

Red curry (we use the “Thai kitchen” brand): in a bowl, mix 2 tsp curry paste with one can coconut milk. We usually add more paste like 3-4 tsp bc we like it spicy!! (We also added a lil kimchi seasoning but this is optional and pretty spicy)

Veggies: we used carrots, white onion, broccoli, red bell pepper, bamboo shoots, baby corn, and water chestnuts. You can use any veggies you like. (**optional add tofu, chicken, beef or shrimp for added protein. Make sure it’s cooked separately before adding to dish)

In a wok/large pan, shred 1 inch ginger clove and 1 large garlic clove. Put a mix of sesame oil and vegetable oil and sautée all veggies. Once cooked, add the coconut/curry mixture, 1 cup water, and cook for 4 more min until all flavors have combined! Add salt to taste!
