A Message from Steelsmith's Smokehouse 🔥
First and foremost, thank you. Thank you to everyone who came out to support us and for being so understanding as we begin this new adventure.
We're not going to lie—there has been very little sleep, a few tears, and a lot of worry. We worried about how opening day would go, whether we could keep up, and whether we would disappoint people. But after seeing the incredible turnout and reading all of your amazing reviews today, it put huge smiles on our faces.
As we've mentioned before, our trailer isn't very large. While our smokers are big, we can only hold so much meat and so many sides, and our warming cabinets are also limited in capacity. We knew there was a possibility of selling out, and we were right—we sold out of almost everything and have very little left.
Honestly, we are amazed. The support from our community has been incredible, and the kindness you've shown us deserves a huge round of applause. 👏
With that being said, we've decided to start slowly and see what works best going forward. We learned today that operating daily simply isn't feasible right now. Our smokers and warming cabinets were completely full, and to be ready for tomorrow, we would have needed to start smoking food again today. With the trailer already packed to capacity, it just isn't sustainable at this stage.
For now, we will begin by operating two days per week. We're considering either:
📅 Thursdays & Saturdays
OR
📅 Fridays & Sundays
Since we were open today, we will be back this Saturday at 11:00 AM to serve you again!
We would love your feedback on which schedule you would prefer for next week and beyond. We'll make our decision in the next couple of days.
Please remember that we will also be attending events throughout the summer and are available for catering as well. Whether it's your next event, a special occasion, or simply a family and friends gathering craving some BBQ, we'd love to be part of it.
One thing we definitely learned today—the brisket was a huge hit! We'll be planning to bring more of it moving forward, and those Hot Dog Burnt Ends were another crowd favourite that we'll be stocking up on.
Thank you again for having our backs, for being patient, and for supporting us as we learn and grow along the way. You are all amazing, and we couldn't ask for a better community.
