Summer pleasure

Thin chocolate layers with chestnut honey, sour cream, and tangy cherries. On top а large quantity of fresh local sweet seasonal blackberries.

Sensorium. My first course focused on creativity rather than learning the techniques of preparation. The first homework is to create a dessert mood board in the style you want to work in.

I was surprised to find that I no longer want to recreate multi-layered glossy desserts with intricate chocolate decorations.

I get goosebumps from simplicity, uneven, seemingly careless, decor. These desserts offer so much freedom!

At first, they seem unremarkable, but once you take a bite, an amazing new world opens up. If it’s a chocolate dessert, then it should definitely taste like chocolate and have elements that enhance it.

Flavor, balance, and a touch of carelessness. These are my new guidelines in pastry art.
