Pizza Hot pockets!

Ingredients:
2 low carb large tortilla shells (8 carbs)
1/4 cup marinara sauce (4 carbs)
Shredded cheese
Meat of choice (pepperoni/ham/bacon)
Veggies of choice (I only used olives)
Dried chives and Italian seasonings

Prepare:
In small rectangular aluminum pan put half the marinara sauce. Add ingredients in each tortilla and roll up. Lay in pan. Top with remaining sauce and cheese.
Bake in air fryer for 20 minutes at 375 °

Net carb count: 12

Ciicken enchiladas anyone?

Ingredients:
5 street taco size Low carb tortillas of choice (I prefer street taco size and jalapeño keto) (5 carbs)
Rotisserie chicken
1/4 cup green enchilada sauce (4 carbs)
5 diced olives for top
1 1/2 cups shredded cheese
2 tbsp dried chives

Prepare:
Pour half the enchilada sauce in the bottom of the pan.
Add some cheese and chicken in each shell and tightly roll, place in pan.
I like to use the small rectangular aluminum pans, they fit perfect.
Add remaining sauce, cheese, and olives on top.
Bake @ 375° for 30 minutes in oven or 385° for 15 minutes in air fryer.

Add Any additional toppings of choice

Net carb count: 9 for entire pan
Makes 5 small enchiladas/Serves 2

Egg casserole with Sauage gravy

Ingredients:
2 small low carb tortilla (2 carbs)
1/4 cup sausage gravy (4 carbs) I used canned
5 eggs
Seasonings of choice (dried chives, salt, pepper, onion powder, garlic powder)
1/4 cup shredded cheese
1/8 cup diced ham (1 carb)
1/8 cup precooked bacon crumbles
1/2 cup frozen hashbrowns (5.6 carbs)

Prepare:
Add Tortilla cut to line bottom of desired pan
Whisk eggs and add on top of shells
Add meats and seasonings
Top with gravy and cheese
Bake @ 400 for 30 minutes

Net carb count: 12.6
Serves 2 large pieces

Chocolate muffin waffles!

Simply mix two tablespoons water and two tablespoons melted butter with the mix and make in the mini waffle maker! It’s a tad higher in carbs but so worth it! Make sure you “dump” the waffle out of the waffle maker they are fragile like a super soft muffin!
If you’re a little extra like me I through in a few sugar free chocolate chips! 🧇🍫

Ingredients:
3/4 cup frozen dragon fruit (7.5 carbs)
1 cup ice cubes
1 cup sugar free Tampico juice
1 sugar free passion fruit packet (2 carbs)

Prepare:
Blend all
Top with redi whip and enjoy!

I made too many yesterday so simply put them in the toaster today and added cream cheese!

Ingredients:
1 egg
1/4 cup bagged shredded cheese
Spices of choice
1/4 tsp baking powder
1 tsp almond flour
Can add bacon too!

Prepare:
Mix all well and make in a mini waffle maker! Sprinkle the waffle maker with shredded cheese if you want crispier.

Net carb count: 2 (1 each)

Don’t sleep 💤 on this sandwich! I make them often and thought I’d reshare the simplicity of them!

Ingredients:
1 egg
1/4 cup bagged shredded cheese
Spices of choice
1/4 tsp baking powder

Prepare:

Probably one of my favorite recipes!!

Cauliflower (potato) Salad

Ingredients:
1 small bag fresh cauliflower or about 2 cups (medium size chunks) (6 carbs)
1/2 cucumber (diced) (1.4 carbs)
3 baby carrots (diced) (2.4 carbs)
2 radishes (diced) (.25 carbs)
1/8 cup celery (diced)(.25 carbs)
1/4 cup diced cheddar cheese
2 hard boiled eggs (2 carbs)
1/2 cup mayonnaise
4 tbsp mustard
1 tbsp dill w**d
1 tsp garlic powder
1 tbsp ranch seasoning
2 tbsp dried chives

Prepare:
Dice all ingredients and mix well. Place in fridge for 1 hour.

Net carb count: 12.3 carbs
Serves 4 (1 cup) servings @ about 3 net carbs for each serving.

Coconut peanut butter chocolate bars!
Ingredients:

1 bag sugar free chocolates as pictured (27 carbs)
1/2 cup crunchy peanut butter (8 carbs) (I use 100% peanut butter for less carbs)
3 tbsp erythritol powder sugar
1 tsp coconut oil
2 tbsp coconut (6 carbs)

Prepare:
In candy bar mold or silicone mold of choice sprinkle coconut (save some for tops). Melt chocolate with coconut oil (30 second intervals and stir) until melted and smooth. Pour in each mold and spread evenly around the molds including sides (save some for tops).
Freeze for 5 minutes.

Melt peanut butter in microwave for about 30 seconds. Stir in powder sugar.
Evenly divide in molds and spread.
Pour remaining chocolate on tops and sprinkle with coconut.
Freeze for additional 10 minutes.
Keep refrigerated or in a cool place.

Net carb count: 5.1 per bar
Serving size: makes 8 candy bar size molds.

Coffee ice cubes!
I drink protein coffee every morning and I hate when the ice waters it down! I simply pour cold coffee in my trays and freeze them. I use them instead of ice cubes then as it melts it’s more coffee flavor!

36oz water
1 pack sugar free sugar strawberry daiquiri water flavor
2 tbs lemon juice
2 tbs sugar free strawberry lemonade syrup
2 tbsp sugar free moon syrup

Mix and enjoy/

Side note: some say it’s not water.. I say it’s guilt free, sugar free, low calorie (5 calories), low carb (2 carbs), and freaking delicious! It is definitely better than any sugar filled juice or soda! So call it what you want.. to me it is amazingly delicious and refreshing flavored water!
